This is the best non-dairy ice cream I've ever put in my

mouth<http://www.coconutbliss.com/>.

I can't get it in Georgia yet and will be making coconut-milk-based,

agave-sweetened ice creams at home this summer. And when I first ate

Coconut Bliss, it was only sold in Washington and Oregon, so I hadn't

mentioned it on here, but now that it's available through half of the United

States, I wanted to let y'all know:

http://www.coconutbliss.com/

Organic, gluten-free, dairy-free, and *delicious*!

I called Return to Eden in Atlanta and requested that they find a way to get

it in. Perhaps if other people in other areas do the same, we can spread

this product to more of our locations!

health, nutrition, and virtually everything? :( *sigh*

I love Ani Difranco BTW! " I am a work in progress... "

Vote Ani for president! lol

Unfortunately they changed their packaging, at first i didn't like

Ganesha, but after a while it grew on me. They must have had an Indian

or two express concern that he was on their product...still he loves

sweets!

Sally -

Would you mind sharing your recipe for the coconut milk-based, agave-

sweetened icecream that you make? I found one in the files that is

sweetened with stevia, but the agave sounds wonderful.

Thanks!

Sure.

My husband and I are in the process of tweaking the ice cream recipes, but

they originally come from Wardeh at Such Treasures. Here they are from her

newer site:

http://gnowfglins.com/2007/07/20/chocolate-ice-cream-non-dairy-naturally-sweeten\

ed/(Chocolate

Coconut-Milk-Based Ice Cream)

http://gnowfglins.com/2007/07/16/coconut-vanilla-ice-cream/ (Vanilla

Coconut-Milk-Based Ice Cream)

We are planning to increase the amount of coconut cream (the fat you skim

off the can of coconut milk) and decrease the whole cans of coconut milk as

a result to give the ice cream a more high-end (fattier) mouthfeel.

Variations we're working on are peach and mocha java. But they are really

delicious as they are written already.

FYI, one can also buy coconut cream in the drinks section of most grocery

stores where it is sold for making pina colodas. Coconut milk is cheaper,

if you don't mind skimming the milk yourself, but if you are in a hurry,

even Walmart often carries it, especially in the summer time.

One trick I learned from Alton Brown, is adding avocado to the non-dairy ice

creams to return some of the fattiness of mouth feel that people miss.

Naturally green flavours like pistachio or mint chip disguise the slightly

green tinge added by the avocado, but we don't get any complaints no matter

what flavour it is.
