Guest guest Posted June 14, 2008 Report Share Posted June 14, 2008 Warm Bean Salad 250 g (9 oz) green beans, trimmed 200 g (8 oz) golden grape tomatoes, halved 400 g (14 oz) can four bean mix, drained, rinsed 1/2 medium red onion, thinly sliced 4 teaspoons baby capers, rinsed 1/2 cup chopped fresh flat-leaf parsley leaves 8 teaspoons olive oil 8 teaspoons lemon juice 2 garlic cloves, crushed 80 g (2 3/4 oz) radicchio leaves, torn 1. Cook green beans in a large saucepan of boiling water for 2 minutes or until just tender. Refresh in cold water. Drain. 2. Place tomato, bean mix, onion, capers, parsley, oil, lemon juice, garlic and radicchio in a large bowl. Add green beans. Season with pepper. Toss to combine. Serve.
