Guest guest Posted June 27, 2008 Report Share Posted June 27, 2008 Sweet Potato Wedges Source: Recipezaar, originally from Canadian Living Let's Barbecue Summer 2004. 3 sweet potatoes (1 1/2 lb) 1 tablespoon vegan margarine, melted 1/4 teaspoon salt 1/4 teaspoon pepper 1. Scrub potatoes and cut each one into 8 lengthwise wedges. 2. Place on a piece of heavy duty foil and sprinkle with margarine, then seal foil tightly to form a packet. 3. Place on grill over medium high heat, close lid and cook until tender, turning once (about 12 to 15 minutes per side). Note: If you prefer a potato with a crisp edge, place directly on grill for 1 to 2 minutes a side at this point (after removing from foil). 4. Sprinkle with salt and pepper. Serves 4.
