Guest guest Posted July 8, 2007 Report Share Posted July 8, 2007 My dad is grilling tonight and said he would be willing to grill some vegetables for me...So, what are some vegetables that are really good grilled? ----------- Basically, all the veggies in ratatouille. (Leave out the eggplant for him.) Zucchini, summer squash, any color sweet peppers, Mushrooms, whole ears of corn and red onion (Thick slices). In a large bowl, make a vinaigrette with regular wine vinegar and a little balsamic, olive oil, salt & pepper. To start, carefully place the thick onion slices in the bowl and rub them around to coat them on both sides with marinade. (The idea is to keep the rings together.) Grill until caramelized. Dump the remaining veggies all at once into the bowl and toss to coat well. Grill at medium-high, in batches turning after about 3-4 minutes, until browned on both sides. Our list: Red onions Red potatoes Zucchini Yellow (crookneck) squash Carrots Sweet Peppers Whole mushrooms Tomato wedges Yams We don't do cherry tomatoes, but friends love them. Eggplant was iffy, turned mushy and I don't think we used the right seasoning..prolly need to speriment with times and spice. Hot peppers are great to grill and add to other ingredients like veggie burritos, tacos, dips. I put a toothpick through them to help keep them from falling through into the fire. Check out recipes for kabobs for more ideas. We like to roast all of the above, too. When cooled, you can add a vinegar/oil dressing and chill for a great salad. Add pasta if you like. Little red potatoes in aluminum foil with olive oil and rosemary. Sweet potatoes, giant garlic, green tomatoes. Guest guest Posted June 27, 2008 Report Share Posted June 27, 2008 Grilled Vegetables 2 zucchini, sliced 2 yellow squash, sliced 1 green pepper, cut into cubes 1 red pepper, cut into cubes 1 lb (450 g) mushrooms, halved 1 onion, halved and sliced 2 cups broccoli florets 2 cups cauliflower florets Dressing: 1/4 cup olive oil 1/4 cup melted vegan margarine 3 tablespoons fresh lemon juice 2 cloves garlic 1 tablespoon (3 tsp) chopped fresh basil 1/4 cup chopped parsley 1/2 teaspoon oregano salt, pepper 1. Layer 2 large sheets of heavy duty tin foil. 2. Add vegetables. 3. Combine dressing ingredients, drizzle over vegetables. 4. Fold sides of tin foil, seal tightly. 5.
