Need strawberry shortcake recipe

I've been looking through our files trying to find a recipe for

strawberry shortcake, but was unable to locate one. I guess I

couldn't find the right category. I need to make some tomorrow for

some gluten free vegan guests, and some picky gluten eating guests.

Does anyone have a tried and true recipe that both would like?

I recently made banana bread (that gluten/dairy eaters loved and devoured)

and I used it as a base for strawberry shortcake. Some vanilla ice cream (I

prefer rice, but soy is ok too) and fresh strawberries. I like to cut my

strawberries up and put a little raw sugar on them and leave them in the

fridge over night so they get a little syrupy. OMG is it good!

 

I got the banana bread recipe from

http://www.csaceliacs.org/recipes3.php?id=38 and I used Bob's red meal GF

flour mix/blend, egg replacer and soy butter. It didn't take as long to bake

as they said though, so check it half way threw.

I do. I modified this pizza recipe to make Strawberry Biscuit. I actually

used this dough without the sugar for a lot of different things. It makes a

great base for scones as well. The original pizza dough is great, just very

biscuit like. I fed this to my pregnant (and therefore very taste

sensitive) sister who loved it. Hope this helps.

*Original Recipe

*Strawberry Short Cake Biscuit*

3/4 cup potato starch flour

1/2 cup chickpea flour (besan)

1/2 cup brown rice flour

1/2 cup tapioca starch flour

1/4 cup sugar

teaspoon of salt

teaspoon of xantham gum

1 tablespoon baking powder

1/4 cup of Ghee (any kind of vegan solid at room temp fat would work as

well)

up to 1 cup of water

 

*Method:*

1. Sift together flours, salt, gum, and baking powder. Stir or whisk until

well combined.

2.Add ghee to flour mix and cut in. Add 1/2 cup water. Stir until combined,

then knead, and form into a dough ball, adding more water as necessary (I

used 3/4 a cup.) (Note: this won't be stretchy like wheat dough. It will be

more like pastry dough.) Only add as much water as you need. Too much and

the crust will be crumbly.

3. Very lightly flour pizza stone/tray (rice flour is good for this). Put

the ball of dough on your pizza stone/tray. Flatten ball until it's a

uniform 1 inch thick circle.

4. Cut dough into wedges and separate them slightly.

5. Bake base for 20 to 25 minutes in preheated oven at 430 degrees. Bake

until golden brown.

*Strawberry ShortCake Creme*

1 can coconut whole milk chilled (use Thai Kitchen or somethingelse without

an emulsifier)

1/3 cup Powdered Sugar

1/3 cup Cocoa Powder (optional)

1 teaspoon vanilla

*

Method*

Skim Coconut Milk and place creme in small mixing bowl. Add sugar, cocoa

and vanilla to milk fat.

Stir in gently with spoon and mix at a high speed with hand mixer. You may

need to add some of coconut water

to this to get the right consistency.

 

*Berries*

1 pint sliced berries

1 Tablespoon Sugar

 

*Method*

Mix and set aside.

 

Pile it all together and enjoy!

I found this one in " Baked Desserts " :

 

 

Shortcake Two

Source: Still Going Against the Grain

 

 

2 1/2 cups Biscuit Mix Two (see below)

2 tbsp (6 tsp) sugar

1/2 cup vegan margarine -OR- 1/4 cup oil

1/2 cup water -OR- milk

substitute for 1 egg, beaten

fruit and whipped topping

 

 

1. Preheat Oven to 375 F (190 C).

 

2. Combine mix and sugar in bowl. Combine melted margarine or oil,

water and egg substitute. Add to dry ingredients until just moistened.

 

3. Knead 10 times on lightly floured board.

 

4. Roll out 3/4 " (2 cm) thickness. Cut with floured cutter and bake

about 20 minutes until brown.

 

5. Add your favorite fruit and topping.

 

 

 

 

Biscuit Two Mix

 

 

3 1/2 cups rice flour

3 1/2 cups bean flour

5 tbsp (3 3/4 Aust.) GF baking powder

4 tsp xanthan gum

1 tbsp (3 tsp) salt

2 tsp cream of tartar

1 tsp baking soda (bicarbonate of soda)

 

 

1. Mix first 7 ingredients well.

 

2. Store in sealed container in refrigerator or ion a shelf for

several months.

 

 

This mix makes wonderful Impossible Pies, pancakes, waffles,

dumplings, and coffee Cake.
