Consequently, I don't have much time for cooking. What quick and easy meals do you all make when time is short? Or do you know of other resources (like recipe websites)? Guest guest Posted July 15, 2008 Report Share Posted July 15, 2008 I always throw one of Amy's Kitchen meals into the microwave. They are really good and healthy and quick! Not all are gluten free or vegan so you have to read the labels. When I have 20-30 minutes to cook or less then I will throw together a fast stir fry. At whole foods I get preseasoned tofu and frozen stir fry veggies. Then I make rice in my microwave rice cooker, toss it all together and add a little sea salt and a little extra sauce (tamari or sesame peanut) depending on what I'm making. I love the Thai stir fry! They have Chinese flavors too. Since I'm the only one eating it I have leftovers for later. I could easily get 4 meals out of each stir fry, but it's so goo I overindulge and only get 2 meals. Cereal is another quick meal! I have eaten bowls of cereal for dinner millions of times! Even as a kid my mother would give us cereal as a fast meal when we where hungry and she didn't have time to cook. I also have snacked on raw veggies that turned out to be meals. Salads are fast and easy and you can get creative with them too! Cranberries are a must! It's incredible what you can do with salad! The marinated tofu is great on salads too! Spaghetti is my last quick meal. All you need are some noodles you can eat and a can/jar of sauce you can eat. If you make enough, you'll have dinner or lunch for a few days. Since it will keep for a while, you can alternate back and forth everyday so it's not the same thing everyday! I get bored with the same thing and then don't eat, which isn't good! Guest guest Posted July 15, 2008 Report Share Posted July 15, 2008 Hi Erin One of my favorite quick meals is small gf corn tortillas heated briefly in a dry frying pan, spread with some canned veggie refried beans (actually not fried at all so low in fat), topped with tomatoes and avocado if I have it, or jarred salsa or even just hot sauce. If I have leftover rice i might throw some in. I also throw beans in a bagged salad with some homemade balsamic dressing. I love cooking beans and mixing it with some garlic, a small amount of crushed pineapple. Cut up baked sweet potato and steamed carrots. I can steam the carrots while the beans and potato cook and throw it all together. It can be served hot or cold. A real hit at my house. Hope this helps.
