I just helped out at a retreat this weekend where I met Dr. Will Tuttle author of The World Peace Diet, along with many other interesting people. So, I made my first vegan cake (felt ton's of pressure as everyone there was vegan).... The cake was in the shape of a book, with an edible image of the book cover on the cake, so the cake looked like a bigger version of his book..... In having discussion with a few of the guests, I asked if anyone knew if I could get a more natural form of food coloring... The edible ink the computer generated image is said to be " safe " (kopykake) and the starch sheets are also supposed to be " safe " .... I am also concerned with the liquid color that I use for the colored icings....lots of FD & C colors... Some suggested beet juice, tumeric, etc... I suppose that might be fine if I'm doing this for my family (beet flavored icing - YUCK!!!) However, I thought maybe someone out in Vegan cyber world might knows of such a product.... We have information on them on the allergygrocer.com site. In spite of having very fussy children we have managed to get away with cakes iced with beetroot and turmeric coloured icings! We found the trick was to add something else for flavouring to mask the slightly savoury flavour (although obviously the icing sugar helps!) such as a drop of a raspberry coulis or vanilla essence. Raspberries themselves can also help to colour icing, although you need to watch that icing doesn't get too wet as the fruit is so moist. Good luck!! In this case we normally have the India Tree Natural Colours and several of their sanding sugars. Unfortunately we are currently out of the Natural Colors but should be getting them back in shortly. You can still read the information about them though. Once you see the Add to Wait List message, just scroll down to see the details.
