Burgers once more!

Hi everyone,

 

Did a quick search of burger recipes here, but no luck.

I am almost on the verge of giving up on rice/bean burgers. We are

soy/gluten/dairy/fat free. Any idea, thoughts? Whenever I try the

recipe, they just never firm up and cook right....

 

any thoughts would be greatly appreciated!

If you like portabella mushrooms, you can grill the caps. They make

excellent burgers! Scrape the insides out with a spoon before cooking so

there is less mess. I also like thick slices of eggplant grilled. They can

serve as a burger as well!

 

You can add corn starch or rice flour to the mixture of your rice/bean

burgers to make them more solid. It's difficult to get a good solid burger

that won't fall apart. Check out sunshine burgers...

http://sunshineburger.com they are vegan, gluten and soy free. I like the

garden herb and the southwest varieties. I haven't tried the barbeque

variety yet but I imagine it would be good. The original is ok but it's a

little bland for me. Overall, they hold up pretty well, better than any I

tried to make from scratch.

Haven't tried it, but others swear by this one. Although there is an

egg white in the recipe, read the poster's notes. There is olive oil,

but it is pretty low and can probably be left out.

Houston's Restaurant Copy Cat Veggie Burgers

 

4 tablespoons hickory barbecue sauce

1 tablespoon molasses

1 (15 ounce) can black beans, drained

2 cups cooked brown rice

1 tablespoon oat bran (substitute quinoa)

onions, finely chopped

1 tablespoon finely chopped canned beets

1 teaspoon beet juice

1 teaspoon chili powder

1/4 teaspoon ground cumin

1/4 teaspoon black pepper

1 teaspoon kosher salt (I use sea salt)

1 tablespoon pickled jalapeno peppers, chopped

1 egg white, add more if needed (to bind)

2 teaspoons olive oil

 

 

1. Stir together barbecue sauce and molasses. Set aside.

2. In a large bowl, mash beans. Stir in 3 tablespoons of the barbecue

mixture (reserving remaining for brushing) and remaining ingredients -- rice

through egg white. Form into four 6 oz patties.

3. Heat olive oil in a cast iron or non-stick skillet over medium. Grill

burgers for 2 minutes on one side. Turn and brush with remaining

barbecue/molasses mixture.

4. Serve with lettuce, tomatoes, pickles, onions and mustard on a bun

which has been grilled in butter.

 

Note: I made these last night and this time I drained the canned beans in a

colander, rinsed them really well and allowed them to sit overnight to " dry " a

bit more. I also rinsed and drained the rice in the same manner. Because

of this apparent reduction in moisture, I didn't have to use the egg white

and they binded just fine.

 

I pattied them up and froze them so I could cook them on at a time as needed.

 

I thought some of you might like this recipe. It is one of my most favorite

things in the world. It makes an awesome meal with some rosemary walnut

quinoa. The last time I made them they didn't bind together well, this time I

drained the can of beans, rinsed them and let them sort of sit overnight.

Here's hoping the lack of moisture there will help with the binding.

 

I do not like to use egg whites because of my allergies to eggs. I also

omit the peppers and cheese.

 

I have always, even in the restaurant, eaten this without the bun, with

slices of tomato and pickle!

The closest thing I've done that meets your criteria is to use cooked,

gluten-free oats. I do not have a recipe, but make them by 'feel'.

They are soft, but manageable. I cook the oats and then let them cool

somewhat. Then add chopped onion, seasonings (herbs; Bragg's Liquid

Aminos; chicken-like seasoning; salts) and a binder of your choice

(ground flax seeds work great; or garbanzo/fava bean flour; add enough

for stiffness of batter). Add any extras you might like (diced

zucchini; grated carrots; chopped red peppers; chopped walnuts; etc.).

Use a seasoned baking sheet and place a wide mouth jar ring on the

sheet and place some of the burger mixture inside the ring to form a

patty. Continue this until the baking sheet is full. Bake at 350 -

375 until golden brown (maybe 30 minutes?) and then take out of oven

and turn over and brown the other side of patties. For variation,

cooked quinoa flakes could be added, but don't use them exclusively

(they make a very soft patty). Be sure to add enough seasoning!!!!!

 

I hope this helps. It's not a traditional Boca-like burger, but it's

pretty tasty. Sometimes I make them and then place in a casserole

dish and add a gluten-free, vegan gravy to make a casserole --- but

they work great for sandwiches too.

There was a recipe in Vegetarian Times a few months ago for

something called Chicago Diner Burgers.

It was primarily oats and mushrooms and onions--really good
