Holly,

I don't have the recipe on hand, do a search in this group for

chocolate banana muffins or do a search using my name " talking2sonya "

and you should be able to find my recipe.....

Hi Sonya,

Thanks for your reply. I am wanting a savoury muffin rather than a

sweet one. Surprisingly I couldnt find a gf/vegan recipe anywhere

on the net. Have had savoury muffins made with wheat but need a

good gf/vegan base recipe and suggestions for flavouring. Some that

come to mind are corn, olives, sundried tomato but any other

suggestions would be appreciated.

Will certainly try your chocolate banana muffin recipe soon - sounds

great.

Hi

I wonder if, without the egg and the gluten, the sugar becomes a more

important structural component? That would make savoury gf vegan

muffins more difficult than sweet ones. Just a thought!

How about starting with a cornbread recipe and adding some herbs,

olives, sundried tomatoes, onion... whatever tickles your fancy.

I things like grated carrot or potato can provide a lot of structure

in muffins/cakes too.

I made some corn muffins two days ago that everyone seemed to love. I can

tell you how I made them and if anyone is interested I can try to piece

together the recipe. My grandaughter has celiac disease and my grandson is

lactose intolerant. I sent over dinner because my daughter is still in the

middle of setting in to a new apartment.

 

I used a recipe from an old Mel London bread cookbook.

 

I have a large container of the betty hagman basic flour mix.

Gluten-Free (GF) Mix - from Bette Hagman's Gluten Free Gourmet 3 c. rice

flour

1 c. potato starch (NOT potato flour)

½ c. tapioca starch

 

Mix well.

 

I have a jar of home made " energee "

 

1 cup potato starch

3/4 cup tapioca starch

2 teaspoons baking powder

 

1.5 t powder + 2 T water

 

Corn Bread

 

1 cup cornmeal

1 cup " flour "

1 envelope baking powder ( 2 t?)

1 glug oil ( 1/8 c ?)

1 t Xanthan

1 1/4 cup soymilk

1 T sugar

2 t (heaping) egg replacer

 

Combine dry and stir in wet. Makes 24 mini muffins

 

Next time I make these I am going to try using brown rice flour instead of

the GF mix because the original recipe called for whole wheat flour.

 

my experience with regular muffins is that you can add anything you want to

these allowing for the idea that you will get more muffins. I'd estimate

using about 1/2 cup of additions - any grated vegetable etc. For mashed

stuff, I would combine it with the soymilk when I measured and them add

about another 1/8- 1/4 cup more liquid to allow for the fiber. For fruit, I

would subtract the same amount because it will release liquid

Here's a muffin experiment that went over well around here.

 

Savory Buckwheat Muffins

 

2 cups brown rice flour

1 cup buckwheat flour

2 Tbsp. almond meal

1 Tbsp. baking powder (I used Rumford brand)

1/2 tsp. salt

1 Tbsp. dried dill weed

1/2 tsp. garlic powder

1 tsp. onion powder

1/4 tsp. celery seed

Soymilk and oil to moisten (the weak point in the recipe I realize, but

I honestly didn't measure...sorry)

Spray 12 muffin pan with cooking spray and fill each cup with batter.

Bake at 350 F for 35-40 minutes.

There are some pumpkin, corn, and zucchini carrot muffin recipes in

the Files that may be suitable.

Kim -

the recipes in the files seem to include sugar so I have assumed

they are a sweet muffin - pumpkin and zucchini are often included in

sweet muffins for texture and make a very nice muffin. A savoury

muffin makes a good lunch, especially with soup on a cold day.
