Then add: 3 cups oats 1/2 cup coconut 1/2 cup sunflower seeds 1/2 cup raisins 1/3 cup wheat germ 2 teaspoons sesame seeds (toasting them first really adds a nutty flavor) 1 cup chocolate chips (vegan type) Stir in well. Guest guest Posted July 31, 2003 Report Share Posted July 31, 2003 Is Earth Balance soy? I really find my sinuses are better when I avoid both soy and dairy(butter). I made the granola bars with organic butter and they were wonderful in spite of the fact they probably baked 10 minutes too long because my ds (7yrs old) turned off the timer and the edges were too hard to eat. But even the organic butter seems to bother me. So I decided to live with the consequences of my indulgence. However, my kids hardly ate even a bite. My dh thinks they are just like some candy he used to eat in Mexico. He's even told me to save the edges and he might munch on them. But even the > organic butter seems to bother me. Earth Balance contains the following oils: soybean, palm fruit, canola seed and olive. You are prob. sensitive to dairy as are most humans. It does create mucus in our systems. You might want to try canola oil or other oils when baking. Also, some people who have sensitivity to soy do better on fermented soy such as tempeh, and miso. Ingredients * 2 cups gluten-free oats * 1/2 cup Dari-free powder (you could sub a multi-blend GF flour) * 1/2 cup each sunflower and pumpkin seeds, lightly toasted * 1/2 cup crisp rice cereal * 1 cup puffed amaranth cereal * 1/2 cup finely shredded unsweetened coconut, lightly toasted * 1 teaspoon baking soda * 1 teaspoon GF vanilla * 2/3 cup Jungle shortening, softened * 2/3 cup honey (or agave or Lyle's Golden Syrup, or a combo thereof) * 2 cups Enjoy Life chocolate chips (or raisins, Craisins, nuts, seeds, dried fruit - experiment!) Directions 1. Preheat oven to 325 degrees F (165 degrees C). Toast the coconut, oats, seeds and cereal while the oven is preheating. 2. Line one 9x13 inch pan with parchment paper. You can lightly grease the pan instead, but parchment paper makes the process easier (comes out in one piece, no knife marks on your pan, easier to cut, faster clean-up). 3. Soften shortening and liquid sweetener in the microwave for 30 seconds then cream together. 4. In a large mixing bowl combine all ingredients and stir until thoroughly blended. Add the 2 cups assorted chocolate chips, raisins, nuts, etc. 5. Firmly press mixture into the prepared pan (it's sticky, so I use a piece of parchment paper between the bars and my hands) . 6. Bake at 325 degrees F (165 degrees C) for 18 to 20 minutes or until golden brown. Let bars cool completely in pan before slicing into bars. I made a few minor changes based on what I had/didn't have in the kitchen that seemed to work just fine...(haven't cut them into bars yet, but the good taste is definitely there! I subbed sunbutter for the shortening puffed millet for the amaranth cereal no coconut Thanks again! I know ds will love them for breakfast!
