Guest guest Posted September 7, 2008 Report Share Posted September 7, 2008 Pumpkin Pea Pasta 100 g (3 1/2 oz) GF spaghetti olive oil 1 cup diced butternut pumpkin 1 garlic clove, finely chopped 1 & #8260;2 red onion, finely diced 1 & #8260;4 cup frozen peas, thawed 4 teaspoons roughly chopped flat leaf parsley 1 & #8260;2 lemon, juiced salt and pepper, to taste 1. Cook pasta according to packet directions. 2. Meanwhile, heat oil in a frying pan over high heat, cook pumpkin for 6 to 8 minutes, stirring occasionally, or until tender. 3. Add garlic, onion, peas and lemon juice. Cook 3 to 4 minutes or until onion softens. 4. Add pasta and toss to combine, season to taste and drizzle with extra oil to serve. Serves 1.
