Guest guest Posted September 7, 2008 Report Share Posted September 7, 2008 Spicy Nibble Mix 150 g (5 1/3 oz) raw almonds 1 teaspoon Cajun seasoning pinch cayenne pepper 2 teaspoons olive oil 300 g (10 1/2 oz) roasted salted peanuts 6 pappadums, microwaved 1/2 cup sultanas (raisins) 1. Preheat oven to 180 C (350 F) or 160 C (320 F) for fan forced. 2. Line a baking tray with baking paper. 3. Toss almonds with spices and oil until coated; spread on tray. Roast for 5 minutes. 4. Add peanuts; roast for 10 minutes more or until golden. Cool completely. 5. Break pappadums roughly; place in a large bowl. Add nut mixture and sultanas and toss to combine. TIP: Make ahead and store in an airtight container/or up to 3 days. TIP: To cook pappadums, arrange around edge of a turntable or use a large microwave-safe plate; cook on High (100%) for 60 to 90 seconds or until puffed and crisp. Serves 6. We keep a package of the raw ones handy for when we are assailed by a salty craving, then pop several into the micorwave and viola! ... an instant crunchy treat that works very well in place of potato chips (I believe these are referred to as " crisps " in the UK) without anything being deep-fried. ... relatively low in calories and a whole grain product. I was introduced to these a few years ago when I took a gluten free vegan cooking class from Vesanto Melina... yes, the famous dietitian/author herself! It was a fun day. :-) A word of advice about the cooking time for them though, it varies widely on the microwave. Set the initial cook time for 30 seconds, then check them. You can easily add more cooking time if they need it. They should only be cooked until they are fulled puffed, leaving them past that tends to create scorch marks. Served them up with " Creamy Cashew and Vegetable Korma (SF) " , " Red Lentil and Spinach Dhal (SF) " , and " Yellow Coconut Rice " ... yum!!! But it turns out they cook up beautifully on my cast iron fry pan, with no oil. Just a minute or less on each side, depending how hot the pan is. Last night for dinner, we had dosas with sauteed wild mushrooms and onions rolled up in side them. A side of steamed kale with seaweed and sesame seeds.
