Guest guest Posted September 13, 2008 Report Share Posted September 13, 2008 Pam Tell her to try using butternut squash (roasted) to make a traditional pasta sauce in place of the tomato. I roast the squash after cutting it open and deseeding. Then when the squash is cooked, scrap it out and use the " meat " in place of tomato in a traditional italian style pasta sauce. It takes an hour to roast the squash and another couple to make the sauce with simmering it and whatnot, but it's soooooo worth it. The really hard part for me is no garlic or onion. Also you can make " BBQ sauce " . It is pretty versatile. Use it in place of regular tomato sauce or tomatoes. Add it to Spaghetti Squash and a few veggies and you have dinner. Food allergy cookbook is all nightshade free, I think The Complete Food Allergy Cookbook: The Foods You've Always Loved Without the Ingredients You Can't Have! (Paperback) by Marilyn Gioannini (Author) is nightshade free (it's at my office so I can't double check. Many foods in it are GF, and although there are non vegan foods, one of the nice things is that she can always sub in tofu or almond milk or other veg alternatives. there is also a nightshade free brand called nomato for non cooks. I called them a while back and they're very friendly and accessible.
