The brand is Gluten Free Pantry, it is a yellow cake. I made my own icing, I couldn't find one already made. You can also use the same mix to make Snickerdoodle cookies that we LOVE! She is so excited to have a cake.? Now she's not Gluten-Intolerant, but I don't want to make a cake and serve it to everyone except my almost-2 yr old son...? I don't want him to see everyone eating cake while he has to eat millet bread or something... So, does anyone have any really good recipes for gluten free, vegan birthday cake?? I'm not going to have time to do a practice run, so I need something that is going to be delicious the first time around!? Frankly, the idea of a cake with no milk, no flour and no eggs .... The mixes they sell aren't cheap, but the chocolate cake mix is out of this world (plus they're all organic and fair-trade!). Since you are under pressure of time just now, how about simply using a gf cake mix from the store? They usually turn out reliably and remarkably (possibly even miraculously!) like what most people are accustomed to having. They are available (in my area) in chocolate and white flavours, both very tastey with a light texture. You can use natural food colourings like a little berry juice for pretty icing, and I'm quite sure most 4 year olds would be happy with that, especially if you serve it with some sort of dairy-free ice-cream! :-) Trying out recipes and finding just the right one can take a lot of time, I know. It's very strange how a recipe can work perfectly for one cook, yet not for another. Can you use almond milk or rice milk? I find that works very well instead of dairy milk in baking, although I usually just use water with perfectly good results. Apple juice is also a possible option. I find that commercial powdered egg replacer or the flax seed method does for the eggs very well. Please let us know how whatever you choose to do turns out! Deborah Just what I need right now... CRAZY CAKE 3 c. gf flour (I use 6 parts rice flour, 2 parts potato starch, 1 part tapioca starch) 2 c. sugar (use a vegan source) 2 tsp. soda 1/3 c. cocoa 1/2 tsp. salt Mix dry ingredients then add: 1 tsp. vanilla 2 TBLSP. vinegar 3/4 c. oil 2 c. cold water mix and bake in a 9X13 cake pan at 350 degrees for 30 minutes. I use the chocolate cake recipe in our archives --- I believe it's called the Amazing Eggless Cake. It's delicious, has always turned out, and I use it for everyone, not just the 'gluten free'. It's moist and flavorful --- those who can eat gluten haven't known the difference. There is also a poppy-seed cake version of the same eggless cake that is delicious as well! We just found out this morning that my husband's company is going to be doing another round of layoffs really soon, so I'm going to pass the expensive cake mixes this time around...
