Liquid smoke. Usually, the meat that's used in beans is something from

the ham family, and the dominant taste there is the smoke.

Try Goya Ham Flavoring. It has no ham or meat products in it. It does have salt,

so add an

envelope or two when the beans are tender or you will have tough beans. Bac-Os

are also

good. They're made of soy and are also veggie.

A replacement that contains no salt or meat, but has the flavor of

ham is Liquid Smoke. One tsp in a pot of beans gives it that smoky

flavor that ham would normally give. I love it in split pea soup and

black eyed peas.

I'm wondering about the reverse. My husband is corn-free. PITA, he is. :)
