If your food touches aluminum, the aluminum leaches into it - ESPECIALLY if it is a high-acid food like tomato sauce or something. (Same goes with aluminum foil touching the food that it is covering while baking) You may notice that when you cook in aluminum, the color of the food changes. I've had many stuffed peppers (covered in sauce) turn a nasty gray color..........from the aluminum. Yeeks. Teflon or non-stick pans are the ones that cause trouble when they are scratched. However, even when they are not scratched, they still produce harmful gases when they are heated. I've tossed all mine and just use stainless steel stuff and glass baking dishes. I've used stainless steel cookie sheets (more expensive but worth every cent!) and they ROCK! Things don't stick to them and when you wash them, you don't have to scour anything off. As far as frying pans and pots, I've heard about enamel coated ones work well, but I haven't done any research into them. Every gluten-free pancake I've made so far has flopped - which I think is due to not having non-stick pans. Maybe not, but that is my suspicion. So..........just some food for thought! I grease the griddle with some oil and the pancakes come out fine. I have to re-grease the griddle with every few pancakes. Guest guest Posted September 23, 2008 Report Share Posted September 23, 2008 there was a recent post about aluminum from foil leaching into food. i wanted to ask about this for awhile (i'm a lurker)....i don't use aluminum pans but i do cook with foil, mostly to heat things in the toaster oven since i also don't use a microwave. can anyone give me more info on heating food in aluminum foil and aluminum leaching into the food? thanks, bonnie Quote Link to comment Share on other sites More sharing options...

Instead of using foil to cover dishes in the oven, I use either a baking sheet or - even better - a silicon tray liner, which works really well because it drapes down over the contours of the food being cooked, keeping heat and steam in - it works really well!
