WFGFSF SODA POP CAKE

Here is a recipe my grandaughter made for a school project and she

isnt on this diet but made anyways.she made 2 batches, of it.She said

the kids loved the cupcales and wanted more.

 

 

WFGFSF SODA POP CAKE

 

3 sticks dairy free/gluten free/soy free maragarine(equals 1 1/2 Cups)

( one batch she used lard)

 

3 Cups Sugar 5 EGGS

1/4 teaspoon salt 3 Cups WFGF all purpose Flour

1 1/2 teaspoons safe VANILLA 1 teaspoon safe lemon flavoring

 

1 CUP any flavor soda pop

 

Cream margarine,sugar,untill light and fluffy.Add eggs,salt, and

flavorings to the sugar mixture.Mix well, Add soda pop mix well.

Slowly add the Flour till mixed up.

Pour in desired cake pans.(She used mini cupcakes for the school)

Cooked in the oven on 350 degrees for 15 minutes.

then the other batch we cooked in the microwave in a microwave safe

Tupperware bowl for about 3 minutes. and it was really good.

part of the batter we cooked in a loaf pan in the oven for aobut 20

min. then checked it and still needed alittle more cooking. so about

30 minutes total. for in the oven.

We liked the microwaved cooked cake better. it was really nice.

 

top with frosting of choice or eat as it is. It is very good.

I'm new to this group so excuse my ignorance but what does WF stand for?  Also,

how in the world can you sub 5 eggs?  Thanks for your help!

Wheat-free, I think.

 

And subbing in a replacer for five eggs probably wouldn't work terribly

well.

WF = Wheat free

 

It is not recommended that one sub for more than 3 eggs in a recipe, so I

would suggest not using this recipe if you need to be eggless.

wf is wheat free, gf is gluten free, sf is soy free

and yes you can sub for eggs you can use a baby food or egg replacer I've done

it before.

I've been on this diet since1986

Maybe try 3 egg sub + applesauce in place of the last 2 eggs.

 

I use applesauce in a lot of baked goods and it gives a moister texture to

the finished product. It also adds sweetness so you should cut back on the

sugar a bit.

 

A lot of places seem to be using WF (wheat free) as a designation for gluten

free possibly since a lot of people seem to still be confused over the whole

GF thing! Personally I think it's more confusing to those of us on the diet

because just because something is wheat free doesn't mean it's gluten free.

There is a restaurant (Doublewide Grill) near me that labels all the GF

foods WF. They have vegan foods too and are really good! Still, I think it

should be labeled GF.
