I need to get my 8 yo ds gf and I am so intimidated.

I guess I'm just worried that I'm going to starve him to death. I

have so much quilt that he needs to avoid all gluten. I have celiac

and my dh has ulcerative colitis (and eats a junk food diet). I'm

vegan and gf, but I hate that my ds needs to be. We were in the

grocery store getting junk food to send to my little brother in Iraq

and ds was pointing out all the foods he will miss and it made me so

sad. Like Oreo's, I miss them and I hate that he will have to. I

think I will be able to figure out a decent enough pizza dough, but I

do worry about other things. I can do this, right? Don't flame me,

but it would be so much easier if he would eat meat (not that I would

encourage that though).

 

What will I feed him when we have to pack a lunch or go to a potluck

or go camping? I'm fine eating salad or just cooked veggies, but he

is not. We homeschool and go on lots of outings, potlucks and now

with spiral scouts there will be campouts.

 

I appreciate any words of wisdom.

Shannon, my 7 year old, homeschooled twins have celiac disease, are

vegetarian and are allergic to dairy and soy.

 

feeding them when we travel is a breeze. Before I go into how I feed

my kids, see if you can find a copy of a book called, " Disease Proof

Your child " by Joel Fuhrman MD. it gives great ideas on how to feed

vegetarian children and most of the food is gluten free.

 

First thing, don't feel guilty. I look at it in a completely

different light. By not being able to eat the junk food I am saving my

children's good health.

 

breakfast is always a green smoothie (today it was spinach, cherries

and blueberries with some flax seeds). Other times it is spinach or

kale, mangoes and bananas or spinach, pineapple and raspberries. it's

sweet and highly nutritious. full of phytonutrients and protein. add

a few raw cashews and that increases the protein.

 

today for lunch the kids had a carrot and red lentil soup that I made

two days ago and a plate of fruit - canteloupe, strawberries and

peaches.

 

Dinner was bean enchiladas in corn tortillas and mango sorbet.

 

Last night I made them tomato and sunflower " creme " soup. it was

quick and delicious.

 

I always have tubs of at least 2 different home made soup in the

fridge and that is often the base for lunch. I then add raw fruits and

veggies with perhaps a hummus or bean dip.

 

I have a bunch of these " Snap 'n Lock " containers

that I use when we travel. Little hands find them easy to open and

close and we don't have any messes since I've been using them. I used

ot use stainless steel with plastic lids because I was scared of

plastic containers but the mess was too much for me.

 

I will typically use the small ones and will put blueberries in one,

some raw seeds and nuts in another, use slightly larger ones for

carrot " chips " (they like it when I run a carrot through the

KitchenAid and they end up like crinkle cut fries), sugar snap peas,

baby corn... whatever veg I happen to have on hand and some other fruit.

 

if I know we'll have access to a microwave I might pack some soup in

one of those containers, otherwise I pack soup in a thermos. I have a

bunch of 10 and 16 oz wide mouth Thermos flasks. I use them for

smoothies (leave out the nuts and seeds if you makes smoothies to use

for travel. the nuts and seeds make them too gelatinous if they sit

for too long) and soups.

 

I'll also make home made baked beans or enchilada filling, heat it up

and stick it in a thermos. then I'll bring either corn tortillas that

I've toasted to make them crisp and/or romaine leaves. I don't eat

corn, so I'll use the leaves as wraps and my kids like to dip the

tortillas.

at my Wegman's Store for less than $5 for 4 in a pack! My boys are

thrilled. We take some tomato sauce, veggies, rice cheese " mozzarella "

and toss in the oven. They love it and have never complained! Just keep

a positive attitude about it, and he likely will too! Best of luck!

Don't worry about camping trips----two of my sons are gluten & dairy free and

very active Scouts--I pack all their own food--for the week long summer camp I

arrive with boxes and coolers of food--the scout camp has been very

understanding and provides space for storage and preparation.  I send in meals

that can be warmed up and fresh fruit, vegetables and my boys make their own

salads....sometimes I have to make a trip mid week with fresh veggies and fruits

but it's worth the trip.

On weekend camping trips, our scouts plan the meals ahead of time and my sons'

patrols have learned to make meals that my sons can eat or to make things that

my boys can easily bring a substitute so they can participate. They bring their

own milk and cereal for those mornings that everyone else is having bagels or

pop tarts.  They also bring single serving gluten free protein drink mix with

water or non-dairy liquid to have at breakfast gives them lots of energy for the

day.

Don't worry---you can do this.

Initially you and your son may feel uncomfortable about this but think about

this--if your son doesn't eat correctly on these trips, he's going to feel

terrible and won't be able to participate and then he won't be known as the cool

kid who just eats differently he'll be known as the  sick kid who is always sick

and holds back the group from doing everything---easy choice, isn't it?

Don't worry about what you can't eat---focus on what you can--there's so much

you can explore that you wouldn't otherwise---all 3 of my boys now  have a real

interest in nutrition and in cooking---they all help in the kitchen--it's a good

thing.

 

There is a good book called Special Diets for Special Kids that has a lot of

recipes for typical kid foods that are gluten free.

 

We are moving towards a more vegan lifestyle which is why I just joined this

group.  So far this group has been great!!

Hi Shannon, I don't know a whole lot about GF to be honest, but I know you

can get really good gf sausages - would they be good for the camping? We

had them at our recent vege expo as well as Fry's vegetarian sausages.

Sorry not to be more help, but sounds like you're getting lots of good

advice from others :)

Susan,

 

I really liked your comment to Shannon about a child being perceived as--- a

cool kid who just eats differently vs. a sick kid who always holds the group

back--- to be a great one. Hope I remember to use that in the future to

encourage others.

My son's Cub camp this weekend:

 

- for supper they are supposed to bring their own meals. We will have

tinfoil packets of veggies to be cooked on the coals.

- for campfire they will have hot chocolate and smores. A tetra pack of

chocolate soy to heat up with everyone else, kinnickinnick's new

" smoreables " gf graham crackers, nice dark chocolate, and some safe

marshmallows that we picked up at passover (which I confess are not vegan,

but we have to also be corn-free, and I have not yet found a vegan,

corn-free marshmallow, and i'm not too good at making them!)

- for breakfast I'm making gf pancakes, and taking soy ham (from our Asian

market - no gluten) to fry instead of the sausages the other boys will

have. they will also have eggs and toast. I'm bringing gf bread for lunch,

so if he wants toast, he can have that too.

- for lunch they are having pitas or regular sandwiches, since one boy won't

eat pita bread. We are just taking gf bread along, and he will have a

veggie ham and lots of vegetables sandwich.

- for snack they are each supposed to bring something to share. DS has

asked for what used to be chocolate puffed wheat squares, but we now make

with puffed rice.

- they are stopping for ice cream on the way back, DS will have fries

instead (others may follow suit, as it is supposed to be very cold this

weekend).

Suggestion--instead of s'mores, try banana boats:

 

slice banana down along one side and stuff the opening with whatever type

chocolate you use---we use a dark organic chocolate (the brand escapes me right

now) and your marshmallow (I have to admit we still use the popular stuff but

the minis and there is so little it may not matter that much)

Wrap in foil.

Stick it on the coals for 5-8 minutes.

Open and enjoy.

Suzanne’s specialties makes a ricemellow crème which is like Fluff but, is

vegan, gf and uses brown rice syrup for sweetener. I found it in Wegman’s

and @ Whole Foods.

slice banana down along one side and stuff the opening with whatever type

chocolate you use---we use a dark organic chocolate (the brand escapes me

right now) and your marshmallow (I have to admit we still use the popular

stuff but the minis and there is so little it may not matter that much)

Wrap in foil.

Stick it on the coals for 5-8 minutes.

Open and enjoy.

My son's Cub camp this weekend:

 

- for supper they are supposed to bring their own meals. We will have

tinfoil packets of veggies to be cooked on the coals.

- for campfire they will have hot chocolate and smores. A tetra pack of

chocolate soy to heat up with everyone else, kinnickinnick' s new

" smoreables " gf graham crackers, nice dark chocolate, and some safe

Yeah, I'm not in the US. No Whole Foods or Wegman's stores here. But I'll

be in the US next month and watch for some.

 

Does it have a strong taste of rice syrup? We tend not to like the rice

syrup flavour if there is too much of it.

Their rice syrup has a very mild flavor and the ricemellow creme tastes just

like marshmallow topping but, it’s actually made out of real food. My mom

used to make me peanut butter and fluff sandwiches when I was a child and I

loved them but, wanted to give my kids something healthier. I made a

sandwich with this and it was soooo good! This is just as good and has real

food ingredients. They also make a rice nectar that tastes light like honey

and a wonderful chocolate sauce that is dairy free and gf. You can order

from them direct @ www.suzannes-specialties.com.

 

 

 

Another great company to be aware of is Kinnikinnick from Canada @

www.kinnikkinnick.com They make a lot of great tasting gf foods that are

also cf that appeals to kids. They put a symbol on the front that that says

gfcf so you don’t have to hunt around on the label to figure it out. Awesome

cakes, cookies, donuts some that are ready made and their mixes are pretty

good too. I have served the chocolate cake to non gf people it tastes just

like regular chocolate cake and has a good texture too. Their oreo type

cookies are a big hit around here too.

 

 

 

Probably won’t help for this weekend but, hope it helps in the long run. My

little guy is pretty picky so we have tried many foods going gf that were

not appealing to him. There is definitely some really good stuff out there

as well that appeals to kid tastes too.

From what I've seen, unfortunately, many/most Kinnickkinnick foods have eggs

in them.
