LOL I at least know how to make it and even the

ingredients but it always sounded like a type of

cross-stitch to me.

Let me sleep all night in your soul kitchen

Warm my mind near your gentle stove

Turn me out and I'll wander baby

:) When I was growing up, my best friend's family had ratatouille a lot,

and since I was in their home as much as my own, I did too. But it was

years and years before I realized it was a real word & their private

nickname for the dish :-)

Oops--that should have been " and NOT their private nickname " :)

HELLO IM NEW HERE MY BIRTHDAY WAS YESTERDAY AS WELL ANYONE HAVE ANY

LUCKINESS HAPPEN TO THEM? HAHAHAH

Sharon Zakhour <sharon.zakhour wrote: Am I the only parent

eating ratatouille in the last week since the movie

came out? :-)

My 12-year-old saw the movie Friday night, loved it and _had_ to make

ratatouille. She came home and researched several recipes. With my

help, we made it for dinner tonight. Some of you old timers will

remember a year ago when we discussed mandolin slicers. I bought the

brand (Borner) that several of you liked and felt was reasonably safe,

but I hadn't used it until today.

Boy, was it fun! My daughter really wanted the layered ratatouille like

they had in the movie and not a " stew-like " ratatouille. So I made

beautifully thin slices of zucchini, yellow squash, eggplant, orange

bell pepper, red onion, tomato. She layered it in a casserole with

herbs (rosemary, thyme, parsley), salt, olive oil, tomato sauce, and

some parmesan cheese between the layers. She cut some parchment paper

to fit the casserole and then we popped it in a 350 degree oven for 45

minutes. It came out pretty well and she was delighted. I now have

loads of leftover paper-thin sliced veggies, so I guess it's going to be

veggie soup tomorrow.

We served it on brown rice. For dessert I made the berry-peach cobbler

featured in this month's issue of Cooking Light, cause this was my

birthday dinner. That was a very yummy recipe. Oh, it will be hard not

to gobble the rest of that up tomorrow. :-)

Ratatouille

4 teaspoons olive oil

1 red onion, finely chopped

1 clove garlic, finely chopped

2 large vine-ripened tomatoes, roughly chopped

2 zucchinis, roughly chopped

2/3 cup roughly chopped marinated capsicum (bell pepper)

1 1/2 cups Italian cooking sauce (passata)(sieved tomatoes)

1/3 cup shredded fresh basil

salt and black pepper, to taste

1. Heat frying pan with oil. Cook and stir onion and garlic for 2 to 3

minutes or until soft.

2. Add tomato, zucchini and capsicum (bell pepper). Cook, stirring

occasionally, for 4 to 5 minutes or until tender.

3. Add sauce; bring to the boil. Remove from heat; stir in basil, salt

and black pepper to taste

Serves 4.
