Guest guest Posted October 14, 2008 Report Share Posted October 14, 2008 Stuffed Golden Nugget Pumpkins (Squash) Source: Orgran Everyday Health golden nugget pumpkins/squash, 1 per person, so you don't want them too big 1 onion, diced 1 cup chopped mushrooms 1 cup mixed nuts, chopped finely 1/2 cup Orgran All Purpose Crumbs (-OR- dry GF bread crumbs) 8 teaspoons nutritional (savoury) yeast, (optional) 8 teaspoons Orgran Coating & Stuffing Mix (-OR- seasoned GF dry bread crumbs) 4 teaspoons wheat free Tamari 1. Wash the pumpkins then cut off the top and remove the seeds, replace the top and place on a baking tray and bake in a 180 C (350 F) oven until they are almost cooked. 2. While they cook prepare your stuffing. Saute the onion, in a little olive oil until they begin to brown. Add the mushrooms and cook until they soften. Add the Tamari and cook for a few minutes more. Place in a bowl and add the rest of the ingredients. Allow to sit for 15 minutes. 3. Fill the pumpkins with the stuffing and replace the top.
