It's probably because there is so much lovely vegan food to eat. I don't find it difficult to eat salad instead of meat, although I do tend to eat in veggie restaurants mostly. As for desserts - you can always have some wicked vegan treat when you get home. I don't think there's any need to feel that you are missing out on anything.
