Being a bad vegan

hi all,

i try very hard to be 100% vegan and check everything , am assertive about things, but if i visit friends or relatives, they dont have vegan kitchens, and this bothers me, but doesnt stop me visiting......i am going to stay with my parents in august and it will be the first time since i am vegan.....i was veggie before and she gave me lots of cheese, and we ate out a lot because that is her lifestyle..............when i visit in august i will have to take stuff with me, or i will only have vegetables and how i will deal with the eating out issue i dont know! she eats out because shes had enough of cooking after 4 children etc and i will be forcing her to cook!

and me cooking chick pea curry, in her fragrant house will not be possible

i can see a lot of pasta with vegan pesto or tomato sauce happening,

Hummus, thickly spread on a hearty/crusty bread with thick chunks of tomato & slices of baked/marinated tofu. Nummm, but can be messy. You may prefer open faced sandwiches with this. Or, same ingredients (except the crusty bread) wrapped in tortilla shells, stuffed into pita pockets, etc.

 

No cooking involved and a pretty nutritious and fulfilling meal.

 

You could also make Vegan chili...chunky pieces of tomato & onions, brown rice for texture. I like to eat with Frito's scoopers....maybe not the healthiest, but nummm. :)

 

Or how about Vegetable soup. Start with a good Vegan chicken-type bouillon, add whatever veggies you like. The fresher the better. I usually use fresh...cabbage, carrots, Brussels sprouts, onions, garlic...and, because I'm a bit lazy after preparing all that fresh stuff...frozen chopped spinach, corn, peas, green beans, etc. I eat this almost every day at work to ensure I get lots of variety in veggies...not very good at eating my veggies otherwise. Of course, if you want you can also add pasta or rice, or whatever grain you like, to it to make it heartier.

Actually, just the hummus with tomatoes sounds REALLY good. Maybe hummus

w/tomatoes and onions on bread? Hmmm....

last nite i made fab, but simple meal, organis fussili, with sauce of chopped tomatoes, whole cherry tomatoes, half a tube of garlic puree, broccoli, and a white onion........a bit of black pepper............

my non vegan partner looked at it, said, sniffing appreciatively, ooooooo whats that, can i taste it?......

i reckon, keep making tasty, spicy, fragrant dishes and he might change sides!!

there are many ways to employ strategy
