yogurt cheese

I love yogurt cheese. I drained a tub of yogurt today and I could just sit and

eat it all up. Unfortunately my husband is not a fan of plain unsweetened

yogurt so the condensed version is not something he enjoys. Rather than eat it

all up myself, I am wondering what I can make out of it. any suggestions?

 

I actually bought 3 large tubs of yogurt on sale so want to drain more of it

later in the week.

I haven't had yogurt cheese for a long time, but I still recall one of

our favorites. We'd mix it with brown sugar and cinnamon and use that

as a spread for bagels.

Greetings, I lived in the Middle-East where the cheese is called " labenh " . I

usually drain it in a strainer lined with cheesecloth in the fridge for a few

days for a firmer texture. I add a small amount of salt to mellow the flavor. I

mix in finely chopped olives, jalapenos, and garlic for a pita spread. It is

reminiscent of the cream cheese and olive sandwiches that my mother used to make

for my school lunch. When purchased in a store, the labenh is usually sold in

small balls that are coated with spice mixtures which may include pepper, cumin,

and mint. Sun-dried tomatoes are always a good additive, too. It is generally

stored in olive oil.

I'm exited to have 2 ideas for my yogurt cheese - one sweet and one savoury.

Unfortunately I have eaten all the cheese just the way it was and now need to

make more.

 

I am thinking the savoury idea might appeal more to my husband so will try to

come up with a few additions that will appeal to him. I don't like olives and

he doesn't like jalapenos but garlic and sun dried tomatoes and spices should

work.
