Raw turnip is pickled in vinegar in the Arab tradition. I think beet juice is added, thus a reddish color. They are often included in the food I order at Middle Eastern restaurants. Guest guest Posted April 26, 2009 Report Share Posted April 26, 2009 I've never tried them raw and doubt that this tough leaf will be a raw hit, but traditionally down here (Southern USA), they are boiled with a ham hock (ACK) after many washings of the leaves to get sand off, then torn up and tossed in the pot. Generally we remove the stem as it is very fibrous and cook the greens a good hour. The turnip root can be cleaned, peeled, diced and tossed in the pot as well. Good food with corn bread. Lots of folks serve it with a bottle of vinegar and a bottle of hot sauce. Dip your corn bread in the " pot likker " . I came across a recipe for raw collard wraps and was thinking about using the turnip greens instead, I was also thinking tearing them into ribbons and mixing with my salad.
