Guest guest Posted June 26, 2009 Report Share Posted June 26, 2009 Since neither of us like capers, I thought I'd add diced sour gherkins to the sandwich but Carl doesn't really like sour gherkins (neither do I but he bought them by accident) so I did half of a cucumber in really small dice and marinated it in a mixture of rice wine vinegar, sugar and water. It's really good and I am not sure that it will last until tomorrow when I assemble the sandwiches for Sunday's High (ish) tea. They tasted like the cucumber salad served at Thai restaurants. I'm not sure if I want to use the little dice, a thin round slice or long slices done down the side of the cucumbers, all marinated in the rice wine vinegar mix. I got the bread done today and a dozen tortillas that we had for dinner tonight. I'll have to make more hummus tomorrow. The cats and I ate a couple of tortillas with hummus as soon as they came off the griddle and Pookie The Evil Beeatch stole one off the griddle when my back was turned. Nighty night. I bet your your homemade tortillas tasted great! Capers, well, I could take them or leave them... except in my spaghetti sauce. Try adding just a tablespoon of chopped or pureed capers to your sauce next time; it is really yummy. I will have to make some sweet Thai cucumbers the way you described. Those sound great. Mung bean sprouts are also good marinated that way. Good palate coolers when you eat spicy food.
