Bento lunches are an art form as well as a delight for the mouth in Japan. Personally, I think they beat the same old sandwich, diet soda and package of chips. You can do bento lunches that are lacto-ovo or vegan, raw or cooked or a combination of both. You can also get addicted to collecting bento boxes, but that's another thing. When you get into making bento, you'll need a nice rice cooker and Japanese rice (short grain, sticky rice). How's that for an excuse to get that rice cooker you've kept telling yourself is too frivolous to buy? Onigiri are easier to make than you may think and you can purchase little containers to hold your sauce, which easily fit in your bento box. Many bento boxes come with the little sauce containers and chopsticks. There are many websites that have bento ideas, gorgeous color photographs and such. This one has a number of vegetarian friendly lunches. http://justbento.com/ Although you don't necessarily need a bento box to carry your lunch in, they are so gorgeous and hold the food a lot better than a brown paper sack. I usually do a bento lunch for myself every day, despite being retired. I find it helps control the calories since it is already made and portioned out. It's a lot of fun, too. I work in a hospital and have all sorts of crap to snack on. Please share some of your menus and recipes that you enjoy packing in your bento box.
