Guest guest
Does anyone have a recipe or idea for a main dish featuring carrots? Supplies are a little low and can't get to the store today. Thanks so much, Mary

Sauté in the margarine with the sliced leek. Add the water and simmer for about 30 minutes, or until the potato is soft. Puree with a hand blender. If you're not a vegan you can add ½ cup of half and half or whole milk (off the heat) just before serving. Garnish with green onion and parsley. Green onion is perfect with cooked carrots. Organic carrots work best for this soup. Taste your carrots first. If they're not delicious, don't bother using them!
