What's everyone planning for dinner tonight?

We're having the baked ziti from the Imus Ranch cookbook. If you don't have

this book, it's a wonderful story about the ranch and the children who

come there and has so many yummy vegan recipes too!! We've made lots of the

recipes that are in it and haven't found one yet that we haven't liked!

We had green chili enchiladas last night

that my daughter made a special vegetarian pan

just for me with black beans.

 

Tonight I am thinking spaghetti, garlic bread, salad...

simple comfort food, with veggie meatballs for me.

We are having leftovers. We have veggie pizza with

onions, peppers, eggplant and Quorn chicken on it.

 

Plus, we also have quinoa vegetable salad,

and will have a salad! My hubby is quite the chef!

 

Yours sounds good! It is getting colder here,

so simple comfort food is great! I do love

spaghetti. We have been trying different

spaghetti pastas. One was artichoke flour

pasta. Pretty interesting! So much variety

in things anymore, which is a good thing!

I am going to have one of my favorite sandwiches for lunch. I make toast and

add Morningstar Farms bacon with an egg or eggbeaters, whichever I have, and

some cheeze.

 

For dinner its scalloped potatoes with the Morningstar Farms fake bacon again,

and a big salad with lots of peas on top!

I'm thinking of either an almost-raw wrap with hummus, kale, olives, and tomato

wrapped in a Romaine lettuce leaf.  Or I may make this raw marinara that I

recently got the recipe for and saw demonstrated, slicing up some zucchini, and

having the marinara over that for a raw spaghetti meal.
