Guest guest Posted October 11, 2009 Report Share Posted October 11, 2009 My friend makes this loaf with green chilie salsa instead of ketchup You won't be disappointed in this loaf. You can make is real spicy too. Makes a great sandwich the next day! " Lentil Loaf " 1 c lentils 3 c veg broth 2 c oats (quick or old fashioned both work) 1 c ketchup 2 heaping tbsp mayonnaise (vegan version) 1 tbsp worchestershire sauce (vegan version) 2 tbsp soy sauce 1 tbsp minced garlic 1/2 cup sliced almonds Bring the broth to a boil and add lentils. Simmer 20 minutes. Turn off heat and stir in oats, 3/4 cup ketchup, mayonaise, worchestershire sauce, soy sauce, garlic, almonds, and 1/2 cup water might need a touch more water. Stir well and place in a greased loaf pan 9X5 . Top with remaining ketchup and bake at 350 degrees for 30 minutes. Serve with mashed potatoes, mushroom gravy, and a green vegetable. Yummmmmmmy I love it cold in sandwiches or hot with dinner or just to nibble on when I've got the munchies. Fortunately my husband does not appreciate it so it's all mine. It freezes great too. I like to slice and freeze individual pieces for quick, easy lunchbox sandwich fillers for work. I shared this recipe with a lady at work and it has become a family favorite at her house. Make sure to let it sit and cool a bit before slicing.
