Guest guest Posted October 14, 2009 Report Share Posted October 14, 2009 You'll love this recipe that I found. It is delicious and colorful! Judy Mayocoba Bean Salad a.. 4 c. Mayocoba Beans cooked a.. 1/4 cup red onion, chopped a.. 4 scallions/green onions, chopped a.. 1 red or green bell pepper, chopped a.. 3/4 cup olive oil a.. 1/4 cup lime juice a.. 2 tablespoons lemon juice a.. 3 celery ribs, chopped a.. 2 tablespoons fresh jalapeno peppers, seeded and finely diced a.. 3/4 cup cilantro leaf, chopped a.. 1 cup feta cheese, crumbled a.. 1 avocado, diced a.. 6 cups fresh baby spinach leaves a.. salt a.. chili powder, to taste Directions 1.. Cook 2 c. beans covered in 6 c. of water. Be sure and rinse and checked the beans for stones before cooking. These cook up pretty fast, if you bring them to a boil and then let set for 3 minutes before returning to a boil. Cook these covered in a large pot. Salt to taste after cooking and simmer about 5 more minutes for the beans to season with the salt. Drain the beans. 2.. Mix beans and the rest of the ingredients except the spinach, avocado and feta, together and chill. 3.. To serve: place the spinach leaves in individual salad bowls and divide the beans amongst the plates. Top with the avocado and crumbled feta.
