Fantastic Hummus recipe from Saveur

I just made this hummus recipe I found in Saveur magazine.  It's the best hummus

I have ever made....light, like the hummus found at Mediterrean restaurants.  I

have never been able to duplicate that texture until now.  I have not had good

results with cooking dried chickpeas before, but I think soaking them in with

water with the baking soda was the secret...they cooked up perfect.  I highly

reccomend this recipe. :)

I am wondering ... 1 1/4 cups tahini seems like a lot. Is this correct

That's what the recipe said.  I only used 1 cup because that's all I had.  It

wasn't overpowering.  Tahini is nutrient dense, so I guess the more the

better.  It's expensive though.  I need to find a Middle Eastern market to

find a better/cheaper source. :)

I thought it was a lot too.  My old standby recipe only used 1/4th of a cup of

tahini.  I used 1 cup (it was all I had) when I made this recipe this morning

and it was delicious.  The tahini was not overpowering at all.  I thought

adding 1/2 cup lemon juice and 3/4 cup of cooking liquid was too much.  The

hummus is a little loose after blending, but it " tightens up " as it sits.  It

really turns out perfect.

I just paid $7 for a jar! I will try the recipe with less! It looks like

there might be 2 cups in the jar.
