I'm addicted to the Olympics and the NBA games that my dinners are stuffed baked

potatoes or veggie burgers or lentil stew from the pressure Cooker. What's

everyone else making?

French fried onion encrusted baked tofu with roasted corn and carrots as well as

baked potatoes. Got a batch of tempeh bacon marinating right now! Hopefully

this one will last us longer than the last! While we are on the subject does

anybody have any good tempeh recipes? I got a really good deal on a bunch of

tempeh but haven't found very many recipes that strike my fancy.

Last night was black bean sweet potato chili. It was yummy and perfect for the

cold snowy weather we have been having. Our area alone has almost 27 inches of

snow and it is still falling. Spring hurry up and get here.

Night before last we had some veggie pasta alfredo and

sauted asparagus... nice thin stalks.

 

Last night we had black bean veggie burgers and

some potato salad; weather was nice and

spring-like warm.

 

Tonight we are having baked ziti with riccotta cheese and

my daughter and I made a zippy marinara sauce using some

canned tomato sauce and a can of spicy rotell with

jalapenos. We have some leftover sauce for a veg chili base

next week. Mmmmm.

 

Thanks for posting and sparking some conversation

about good veg food, Donna. I have been so busy at work

that usually by the time I get home I just eat and chill out.

Love those Winter games! Go USA!
