Warm welcome to the group, Liz.

Thank you for taking the time to post an

intro. It is great you are getting into eating

healthy. College is a difficult time for many

people to stay healthy. The parties, the stress

eating, the lack of funds for good food! Ugh!

It is a challenge and we will be her to help

in any way we can.

Our recipe files are a great resource so dig in

there. You have any other questions along the

way just ask. :)

know where to start as far as preparing the rice balls and whatnot, but I hope

to learn that in time.

Thanks for the warm words! Everyone is so nice here. I was kind of embarrased by

my posting for a while because my first name shows up but I use my middle name

most of the time so that is how I introduce myself. It makes me look like a

total liar! Urg.

Anyway, I think that becoming a vegetarian has probably been easier due to the

fact that I moved out of the dorms 2 years ago and so I am not forced to deal

with cafeteria food. It is so much easier since I cook all my food myself.

Parties are disasters as far as trying to be healthy is concerned, but I have

found that as I am getting closer to graduation I don't really indulge in them

much anymore. I think that I am at the point now that I am ready to be done and

although some of my more Dioynysian years were fun, I don't want to be

distracted anymore. I will drink a glass of wine or a beer with my dinner

sometimes, but that is about it.

Lack of funds is my main problem now! My mom is actually going to send me some

food staples in one of those flat-rate shipping boxes for my birthday this

month. I'm really excited about that! I am rather pleased that she is being so

supportive of me in this choice and others. I didn't really think that she would

be since she loves her meats, but she seems to understand where I am coming from

and is even going to look at labels on my behalf. I am hoping that maybe I can

see her sometime soon and make her a proper vegetarian meal.

Hi Heather,

Welcome to the group.  Are your children going veggie too?  I have a son who

will be 10 on Tuesday and he's been vegetarian his whole life.

Be sure to check out the group's recipe files.  There are tons of tried and

true recipes there.  Also feel free to post any questions, recipe

requests,etc... you may have.  We have lots of helpful members. :)

Hope you like it here,

Susie

Wait just a minute I never said I was trying to force him into anything he

can be anything he wants to be but since everyone in our house is becoming

vegetarian I will no longer buy or cook meat I simple said I am afraid it

will be hard for him to deal with when he is with us because he and his mom

still eat meat please don't jump to conclusions when you read something

I'm sure you will provide him with choices. I have 2 teen sons who enjoy veggie

dishes but really just need extra protein during their big (and again, BIG)

growth years. Something they love is couscous and hummus and veggie kabobs. I

will make proteins that they can have in addition but I offer choices. Hope it

helps!! They love anything that includes dips:) I'm pretty sure they just inhale

the food anyway:)!

Thanks I do plan on providing choices for him and of course there are things

he loves (mac and cheese ecspecially) that I will still make Dakota is just

used to eating meat at every meal he is a football player and even at 11 he

has that athlete appitite and he love things like roast and burgers and such

I have already made a black bean burger (my 4 yr old didn't like it) and I

am making a potato veggie burger next week I've never had hummus but we all

love couscous and pasta so I know there are options out there he is just at

the age where he compares things at our home to his moms where he is an only

child guess we'll see how things go Friday lol

I might suggest taking him with you to the grocery store and having him

participate in the process. He may feel important and like he is doing it with

you instead of having it done to him. It was a wonderful experience with all 4

kids...more or less.

That is an excellent suggestion.  This process actually got my husband to start

to read labels and ingredients.

Extra protein? Huh? There's plenty of high protein vegetarian sources. In

fact, foods like tofu, seitan, beans and vegetarian meat substitutes tend to

have a lot *more* protein than an equivalent caloric intake of meat because they

are lower in fat. I am not in any way suggesting you should force your kids not

to eat meat (just as parents should not force their kids to eat meat), but

please don't perpetuate the myth that a vegetarian diet doesn't have as much

protein (or as high quality of protein) as an omnivore diet.

Extra protein that my sons are interested in eating. I was referring to her step

son who, not growing up veggie would maybe not eat anything unknown to him. Try

getting a teenager to eat tofu! Or anything unknown. Tricky business...
