College is a difficult time for many people to stay healthy. The parties, the stress eating, the lack of funds for good food! Ugh! It is a challenge and we will be her to help in any way we can. I was kind of embarrased by my posting for a while because my first name shows up but I use my middle name most of the time so that is how I introduce myself. It makes me look like a total liar! Urg. Anyway, I think that becoming a vegetarian has probably been easier due to the fact that I moved out of the dorms 2 years ago and so I am not forced to deal with cafeteria food. It is so much easier since I cook all my food myself. Parties are disasters as far as trying to be healthy is concerned, but I have found that as I am getting closer to graduation I don't really indulge in them much anymore. I think that I am at the point now that I am ready to be done and although some of my more Dioynysian years were fun, I don't want to be distracted anymore. I will drink a glass of wine or a beer with my dinner sometimes, but that is about it. Lack of funds is my main problem now! My mom is actually going to send me some food staples in one of those flat-rate shipping boxes for my birthday this month. I'm really excited about that! I am rather pleased that she is being so supportive of me in this choice and others. I didn't really think that she would be since she loves her meats, but she seems to understand where I am coming from and is even going to look at labels on my behalf. I have 2 teen sons who enjoy veggie dishes but really just need extra protein during their big (and again, BIG) growth years. Something they love is couscous and hummus and veggie kabobs. I will make proteins that they can have in addition but I offer choices. Hope it helps!! They love anything that includes dips:) I'm pretty sure they just inhale the food anyway:)! He may feel important and like he is doing it with you instead of having it done to him. It was a wonderful experience with all 4 kids...more or less. In fact, foods like tofu, seitan, beans and vegetarian meat substitutes tend to have a lot *more* protein than an equivalent caloric intake of meat because they are lower in fat. I am not in any way suggesting you should force your kids not to eat meat (just as parents should not force their kids to eat meat), but please don't perpetuate the myth that a vegetarian diet doesn't have as much protein (or as high quality of protein) as an omnivore diet.
