Mushroom Lentil Burgers 1 tsp. vegetable or olive oil 1 Vidalia onion, finely chopped 2 cups fresh mushrooms, finely chopped 1 clove garlic, chopped 1/2 tsp. dried basil 1 19 oz. can lentils, drained, rinsed 1/3 cup quick cooking rolled oats 3 tbsps. grated low fat Parmesan cheese 2 tbsps. nuts, chopped (your favorite) salt & freshly ground pepper In non-stick frying pan heat oil over medium heat. Saute onion, mushrooms, garlic and basil in oil until soft and just starting to brown. Remove from heat. Cool slightly. In large bowl mash lentils coarsely (potato masher is excellent). Stir in cooled mushroom mixture, rolled oats, Parmesan cheese, nuts, salt and pepper to taste. Shape into four 3/4 inch thick patties. Cook patties in lightly greased non-stick frying pan or on greased grill over medium-high heat, 3 to 4 minutes per side or until golden brown. Serve in hamburger buns. Serves 4.
