Marinated Mushrooms

I can't remember who posted the recipe for marinated mushrooms with orange

juice, ginger, soy sauce, and garlic, but I made it today. Thank you for

the idea - it was sooo yummy! I made a peanut sauce to go over it and I

was in heaven!

This is not a raw recipe...you'll have to adjust it to make it raw.

 

To answer the other question about where I got raw peanuts...my local

health food store, Lassen's, sells them. I believe Whole Foods also

sells them.

 

1/2 cup peanut butter

1/2 cup hot water

2 tbsp. soy sauce

2 tbsp. sugar

3 medium cloves garlic, minced

1 tsp. cider vinegar

1 to 2 tbsp. minced fresh cilantro

cayenne, to taste

salt, to taste

 

Place peanut butter in a small bowl. Add the water and stir patiently

with a spoon until uniformly mixed. Stir in remaining ingredients

and mix well. Cover tightly and refrigerate. Let come to room

temperature before serving.

Marinated Mushrooms

a.. 1 onion, sliced thin

b.. 2 garlic cloves minced or sliced thin

c.. 1 1/2 cups soy sauce lite

d.. 2 cups water

e.. 1/2 cup butter

f.. 1 1/2 cups white sugar or sugar in the raw

g.. 4 (8 ounce) packages fresh mushrooms, stems removed

In a medium saucepan over low heat, mix soy sauce, water and butter. Stir until

the butter has melted, then gradually mix in the sugar until it is completely

dissolved.

Place mushrooms, onions and garlic in a slow cooker set to low, and cover with

the soy sauce mixture. Cook 8 to 10 hours, stirring approximately every hour.

Serve over rice, mashed potatoes, baked potatoes, noodles, etc.

Thanks for sharing this recipe. I haven't made

mushrooms like this in a slow cooker before,

but it would be great at our next potluck at work.

 

Do you think these would be okay with less or

no sugar? I am not a big fan of " sweet " when it

comes to shrooms, preferring more the

salty-tangy-garlicky flavors. Thanks again. :)
