Dinner?

What are you planning to make for dinner tonight?

 

I thought it might be nice to share our plans for

dinner tonight, or this week. It could inspire a

person to try something new or give ideas to people

who might not know what sounds good right now.

 

 

The weather has taken a turn for cooler today here in

Oregon so I am planning to make lasagne for our

Sunday meal. Salad, garlic bread and extra sauce on

the side. :)

I'm about to go pick over some pinto beans and soak them.  I may make cornbread

to go with them tonight or just have them in tortillas with cheese and sour

cream.

 

I'm thinking about doing some kind of veggie chili this week.  I want to try a

new recipe.  I will post one if I get around to making it.

Cubed Russet Potatoes, Onion cut in quarters and sliced thin, Garlic, Garbanzo

Beans and Hominy. In a crock pot with crushed Tomatoes. Some Curry Powder,

Mustard Powder, Red Pepper Flakes, A ground up Dried Guajillo Chilie and topped

off with some soymilk in a crock pot. Not decided if it will go with rice or

noodles.

I've been out all day I'm too tired to cook. I'm sure I have a veggie pizza in

the freezer and that will have to do. I've cooked every day this week so it's

my day off. That's my story and I'm sticking to it.

Number 1 son was here today working on the tornado damage here so I made veggie

pot stickers in a veggie broth. He and his father ate themselves sick.

Well - I'm trying to salvage my lentil loaf! I took it apart, added an envelope

of onion soup mix and a half can of condensed tomato soup, some salt and

pepper...mixed it with the electric mixer...and it is now in the oven. Will let

you know if I am having it for dinner!

Tonight I am gonna stuff a large portabello cap with leftover spagetti, top with

cheese and bake.

I'm making a barley and green bean soup... I'm not sure what else will go in it,

whatever I've got I guess... onions, carrots, and seasoned with bay leaf, pepper

and oregano... some rosemary would be nice in it too. I spent this weekend sick

with a stomach flu so I'm going with " warm " and " easy to digest " ... not to

mention " I forgot I had that in the fridge! "

So I had cabbage & potatoes and didn't want to make colcannon. I searched on

cabbage + potatoes and what came up at the top of the search results was an

Ethiopian recipe calling for those two ingredients plus carrots & onions (both

of which I had on hand. So I set about making it, and it was fabulous. I've

put the recipe below.

 

ETHIOPIAN CABBAGE DISH

 

INGREDIENTS

 

* 1/2 cup olive oil

* 4 carrots, thinly sliced

* 1 onion, thinly sliced

* 1 teaspoon sea salt

* 1/2 teaspoon ground black pepper

* 1/2 teaspoon ground cumin

* 1/4 teaspoon ground turmeric

* 1/2 head cabbage, shredded

* 5 potatoes, peeled and cut into 1-inch cubes

 

DIRECTIONS

 

1. Heat the olive oil in a skillet over medium heat. Cook the carrots and

onion in the hot oil about 5 minutes. Stir in the salt, pepper, cumin, turmeric,

and cabbage and cook another 15 to 20 minutes. Add the potatoes; cover. Reduce

heat to medium-low and cook until potatoes are soft, 20 to 30 minutes.

 

 

I used about half that much olive oil, and used more spices, to taste. It was

so fragrant while it was cooking, good the first night, but on subsequent

lunches, it was even more delicious. I think it would have been good with

flatbread, but I didn't have any and just ate it plain out of the bowl.
