Guest guest Posted November 17, 2009 Report Share Posted November 17, 2009 We're going up to the Smoky Mountains to Pigeon Forge and Gatlinburg, TN for a few days before Thanksgiving and then over to spend a few days at Thanksgiving with my family not far away.. We can't wait to go do some hiking in the Smoky Mountain National Park, see the Christmas lights at Dollywood, go to the Dixie Stampede for dinner and their Christmas show, see Christmas lights in Gatlinburg and enjoy the area. For Thanksgiving we will be have a Worthington Meatless Smoked Turkey Roll. They come frozen, so we thaw it in the refrigerator overnight and then will bake it in the oven on a baking sheet to crisp it up and then slice it up. This 4 lb roll is about 1 ft long and has a diameter about 4 - 5 inches around. http://www2.kelloggs.com/Product/ProductDetail.aspx?brand=229 & product=399 & cat= This stuff is excellent!!! I'll make some gravy to serve with it. Left overs are great with sandwiches or to make a turkey salad with. I'll make a cornbread stuffing with Fri-chik(Worthington vegetarian chicken subsitute), I like to bake it in large muffin pans and call it Stuffin Muffins. That way everyone gets crispy sides. LOL Served with Cranberry sauce slices. Indian Style Rice with Cashews, Raisins and Craisens(recipe in our Indian recipe files), - special request of my family a baked spinach articoke dip with toasted french bread rounds to spread it on, Lightly Steamed Fresh asparagus then add to a frying pan with a little butter and minced garlic and saute. My mom is making a lemonade cake, chocolate pecan candy, and her special fruit cake. She is also making some homemade whole wheat bread. Not sure what the others are making yet, but they are all great vegetarian cooks so it will indeed be a feast! I'm going to make Roasted Butternut Squash and Carrot Bisque to go with one of the meals we have together(another special request from my sisters). I think I'll make Oriental/Asian Coleslaw to go with it and some Vermont Maple Sweetened Cornbread. I'm sure we'll have pumpkin pie and Ms. Smith Mincemeat Pie too. One of my daughters makes awesome Peanut and Pecan Brittle. So easy and turn out perfect. Then my sisters and our teenagers & 20 something yolds will head out early on Friday morning to do Christmas shopping and catch some deals. It is a lot of fun and something we always look forward to. I'm holding a fund raiser this Saturday with a lunch and dinner, The Compassionate Thanksgiving. It is a potluck with a main entree of Tofurky. I will be making vegan gravy and a couple vegan pumpkin and sweet potato pies. Then on Thanksgiving it will be just my husband and I. Kind of sad in a way, but it will be alright. We will be having a celebration roast, vegan gravy, mashed potatoes, stuffing, and pumpkin pie. Guest guest Posted November 17, 2009 Report Share Posted November 17, 2009 I'm almost ashamed to admit my Thanksgiving menu.... Our first Thanksgiving as vegetarians, I knew less than nothing. We went to my in-laws. She handed me a can of peas and said, " That's the best I can do. " We drove home the next day and I made a homemade pizza, we had a beautiful salad, garlic bread and pumpkin pie and a tradition was born. I will be setting the dvr for that show. This year we will be in Blue Ridge, Ga in a rented cabin with 2 other families. We all chose a meal from " around the world " to provide for dinner each night and we will be visiting one of the Top Chef rest. on the other night. Non-traditional, but full of thanks. It's still hot and humid in west Fl, so I am sure I will be most thankful for warmth when we return My meal will be 'American' with veggie burgers from Houston's Rest. With sweet potatoes, coleslaw, and green bean casserole. My husband had a huge influence in my decision, as he LOVES Traditional Thanksgiving foods . I told him I'd make a tofurkey when we get back, but neither if us have had one, so he just muttered like a teenager Cassie " life's a garden, dig it! I'd like to share this recipe. Absolutely wonderful! Herbed Lentils and Rice 2 2/3 C veggie chicken broth 3/4 C lentils 3/4 C chopped onion 1/2 C brown rice...white works in a pinch, but the texture isn't as nice when all is said and done 4 oz cheddar cheese, cubed (never know what 4 oz. is so I just cube a bunch) 1/2 t basil 1/4 t oregano 1/4 t thyme 1/8 t pepper 1/2 t garlic powder Mix all.
