Mexican Pinto Beans (pressure cooker)

Mexican Pinto Beans (6 qt. or larger PC )

* my first choice is anasazi or mayocaba beans*

 

2 cups dry pinto, anasazi or mayocoba beans

1/2 to 1 whole yellow onion, chopped

2 large garlic cloves, minced

1 tsp. dried oregano

1 jalapeno pepper, minced

8 sprigs or more of fresh cilantro

1/2 tsp. cumin

1/4 tsp. pepper

6 cups water

1-1/2 tsps. vegetable or olive oil

1 tbsp. salt (added to cooked beans when done)

 

Put in pressure cooker. Add

onion, garlic, jalapeno, and spices, oil, plus water.

Seal lid of pressure cooker. Cook over medium-high

heat for one hour. Release pressure under cold

running water. Mash cooked beans with potato masher (I like to have some whole

beans in mine when done). Add 1

tablespoon salt to cooked beans, stir.
