Just wondering what everyone is having for dinner tonight?

I had courgette and mushroom pasta

I cooked a chopped onion, half a courgette (zuchini) (chopped), and 3 large mushrooms chopped in a little spray oil. I let it simmer so it was all soft, and then added a minced garlic clove and some tofu (a handful roughly). At the same time i was cooking wholemeal spaghetti in a pan of boiling water. When it was all done, i blended/pureed the veg until they were all mushy, seasoned and added a little soya milk (optional) and then tossed the cooked and drained pasta in this mixture.

It was delicious and quick (and its vegan)!

Sounds Yummy!

 

I eat a few extra carbs with my running program. Breakfast is oatmeal, banana, orange juice....snack...organic cranberry juice, blueberries, protein powder and omega oils 3-6-9....Lunch...chickpea salad, mixed veggies and 1 hard boil egg...Dinner....brown rice and stir fried mixed veggies....plus 8 glasses of water............snack???? I am craving sweets at the moment :-) Plus I take extra vitamins with my running!!!!

actually..i gave my old shadow to her

she's gonna rebuild the whole thing and make it how she likes it....

 

we always cook fer each other, er together..

but, frankly, she is definately a much better cook then me...

 

dining room is almost unpacked!!!

Thats a relief, I thought we might be hearing the patter of tiny paws! oh...and forgot, we also had a " chicken " salad.....

 

and a few bottles of nummy beer...

Its what she fancied, and all my meals are frozen bulk jobbies so she doesnt touch those as they are mine, all mine I tells ya............. don't really do stew..except for " leftover " soup type stews, generally in

winter..with wotever is reamining in the fridge

use it before they go bad sorta thing....

 

 

last nite was linguini with coconut milk, tofu, snap peas(we've just got tooo

many snap peas!), zuchini, garlic, chives, and spices..

Hi Jo

 

That sounds yummy!

 

I don't do a stew but I will make veggie soup from the garden. It

just depends what is ripe and on hand. Usually it is potatoes, green

beans, onions, carrots, celery, mushrooms, corn, peas, basil, thyme,

rosemary, salt & pepper, touch of ginger, garlic and then sometimes

add in some barley or rice.

 

Occasionally something else will wander into the pot too. :)

Hi Nikki

 

We made a lovely potato and leek soup the other day - quite simple and very

tasty. We've not made many soups, well not since our chicken eating days

anyway, but I am trying to cut out salt which puts my blood pressure up.

Ready made soups are very high in salt, so we thought we'd start making our

own. They are far more tasty.

Hi Jo,

 

That does sound tasty and quite simple too. I love this time of year

when everything in my garden is popping and I can really start

enjoying it again. :)

Hi Nikki

 

You're rubbing it in now :-) My gardening has been a disaster this year -

the slugs and snails even ate my tomato plants down to the ground -

something I've never known happen before. Even my herbs are suffering from

the heat. I'll try again next year.

 

Your produce sounds lovely.

My cucumber beetles are back again this year and they are slowly

taking out my cukes. :(

 

But other than that all is doing pretty well back there.
