Guest guest
It's that season in the CSA when the greens supply outstrips what I can do with them. I brought home four bags of different greens tonight! Recipe ideas? I have done lentils & greens, pasta & greens, worked them into eggs, even eaten them as salad. I'm running out of ideas. Anyone have some creative uses?
Guest guest
use a combo of half wine, half soy sauce, a lot of garlic powder to taste, and some oil, maybe like 3 tablespoons. Dilute this sauce with water to taste. Cook covered until done. If you like athicker sauce you can thicken it up with some cornstarch and water. It is deliciuos. I use this recipe to make cabbage and collards. ) blessings, Chanda Maria On 3/23/2010 11:02 PM, Cat wrote: > > It's that season in the CSA when the greens supply outstrips what I > can do with them. Here's one way I enjoy them as a side dish: In a large deep pan, saute two onions -quartered and sliced thin - in olive oil, add two or three cloves of minced garlic; when translucent, add a pound of mixed greens, pour over a cup of vegetable broth, add some salt and pepper, a tsp of thyme, a dash of balsamic vinegar, and, if desired , a bit of smoke flavoring. Cook until greens are tender. Eat with cornbread to sop up the " pot liquor. "
Guest guest
ChandraMaria, Mary, Judy: Thank you so much for all the wonderful ideas! I'll be wishing for more greens after I try all these. I did come up with a couple more recipes on my own, one is a Thai Curry bowl that uses spinach, but I will substitute my greens in it, and the other is cabbage rolls, chock full of other vegetables & pastini (tiny pasta shapes).
