Donna, I had a Mexican 101 cooking class last night and one of the teachers made a stuffed pepper recipe much like the one you sent. They made all types of salsa and guacamole as well as enchiladas. Guest guest Posted May 5, 2009 Report Share Posted May 5, 2009 Nope I am sick, so I am just staying as rested as my 3 year old will let me. (which isn't much it seems) I ended up overdoing it in the yard sunday, my allergies went bonkers, then all that crud settled in my chest, and I am here now with an on again off again low grade fever and feeling puny. lol Hubby will be home tonight though so I pulled dinner out to thaw for him to cook when he gets here. We already killed the vegetarian corndogs (kids liked them better than the regular ones) and the Bocca chicken patties are toast as well. We had those on wheat bread with mayo, and an organic salad yesterday. The kids had no clue until I told them. David is starting to complain he wants some real meat again and begging grandma for some bacon or " something grandma - she's trying to killlllll uuuuusssssss! " She said maybe later a few vegetables never killed anyone! Whoo hoo! My mom whole heartedly approves my increasingly vegetarian diet and brought me over some fresh picked asparagus as a treat. My favorite veggie! I am spoiled..grins mischeviously. My oldest son lives with her and is practically a vegetarian anyway, he has always prefered fruits and veggies. He stopped eating a whole lot of meat when he was about 4 and he was snarfing down some chicken and he looked outside and saw my mothers chickens scratching in the yard and he looked at his plate, looked out the window, repeated that a few times, then asked my mother if the chicken on his plate was the same chicken he helped take care of. When my mom said yes he just stopped eating it. He wouldn't touch meat for about 5 years after that. Even now it's in moderation, unless you cound the pepperoni in hot pockets......sigh....he lives off those. My middle son is the carnivore, and my youngest would rather sit and eat raisins, prunes, and carrots (or any yellow/orange veggie) all day long. He sincerely believes raisins are candy because I put them in rice pudding and cookies. We don't tell him any different. I think it's funny how he begs for a hamburger then only eats the bread. We have since curbed going to " hamburger house " as he calls any fast food place. He does love sonics tatertots, onion rings, and " puprl ice " (grape slush) and the bananas. He is nuts over bananas. His favorite since a baby though to eat just plain is mango or papaya. My mom swore he wouldn't like it when he wanted some from her fridge but she gave him a " taste " as she believes in letting kids taste new things. He ate over half " her " papaya - which was going to be her lunch for work! lol (I tried to tell her.) She was shocked but kept handing him more shaking her head and calling him a " strange kid " , but laughing with him and enjoying his pleasure. Course this is the same woman that keeps double stuffed oreos in a drawer just for him.
