The following comes from the Victory Garden Cookbook, and is a huge favorite -- we serve it (multiplied times 4) at our annual Christmas party and there are folks who come late who are VERY upset if it's all gone. Sweet and Sour Red Cabbage 3 - 4 lbs purple/red cabbage 1 tart apple 4 TBS Earth Balance or other buttery vegan stuff 1 heaping TBS brown sugar 1 cup finely chopped onions 6 TBS red wine vinegar 1 cup stock or salted water (currants) 1/2 cup red currant jelly Wash off the surface of the cabbage, then shred it or chop it . Melt butter substitute in a big heavy pot (like a Le Creuset pot) and stir in the brown sugar. Peel, core and chop the apple. Peel and mince the onion. When the sugar has melted in the butter and it's started to foam, add the onions and apple, stir, cover, and cook over low heat for 5 minutes. Stir in the cabbage and the vinegar (which keeps the color fresh) and continue to cook over a low flame for 10 minutes, stirring occasionally, until the cabbage has mostly wilted. Add the broth or salted water, and cook for two hours over a very low flame or 2 1/2 hours in a 300 degree oven. Stir every half hour or so. If the cabbage is young and fresh, it may not take the whole time, so taste it. Add the currant jelly just before serving. Check saltiness and sweet/ sour balance to make sure you're happy. I usually add about 1/2 cup of currants for the last half hour of cooking time, before the jelly. This can be made ahead, put in the fridge and reheated; the favors are even richer. If you like caraway, you'll like this. Also, let me know if you want a dessert pie or a savoury pie. I've got a great tofu quiche recipe and a chocolate dream (tofu) pie recipe. I have found agave syrup to be even better than the brown rice syrup as it has a more neutral taste. There is a recipe for the crust but, since you have a crust precooked then just go with that. Warning: it is very rich! Chocolate Cream Pie Crust: 1 c flour ¼ c canola oil 1 c ground rolled oats ¼ c brown rice syrup ¼ tsp salt 2 tbsp water Filling: 6 squares unsweetened chocolate brown rice syrup to taste 12 oz silken tofu 1 tsp vanilla Crust: Combine dry ingredients in bowl. Combine wet ingredients and pour onto dry. Mix until well moistened. Press into oiled pie plate, bake 350 for 15 min, and cool. Filling: Melt chocolate in double boiler. Transfer to food processor, add syrup, tofu and vanilla and process til smooth.
