I had a question for you all about summertime icy treats. I recently purchased an ice cream maker in the hopes of creating some yummy treats mostly for my stepson, who has severe milk, egg, and other allergies. The rest of the family is mostly vegetarian, but not vegan and I am frequently looking for something else for him when we are indulging in dessert. I am also trying to stay away from heavily sugared stuff and find the vegan store-bought Tofutti-type stuff cost-prohibitive. I have found one simple sorbet recipe with sugar and lemon juice that I like and I have experimented a bit with adding crushed raspberries (which tasted great frozen). I wonder if anyone has any great recipes for use with an ice cream maker that would be more of a creamy flavor (something with soy milk), with chocolate (he can have pure cocoa), or agave for sweetener. There's a blog dedicated to vegan ice creams (I believe there are some using natural sweetners like agave as well) on veganicecream.blogspot.com With soymilk, you get a little thinner/not as creamy-ish ice cream, so you can use any of them and just sub soymilk for the coconut milk. I've seen an alton brown recipe for avacado ice cream, I think either is or can easily be substituted to make it vegan/vegetarian (I've not looked at it in a while). There is one on the veganicecream site, too. Guest guest Posted June 27, 2009 Report Share Posted June 27, 2009 i dont know about ice cream makers, but my friend freezes bananas than puts them in a blender with cocoa. apparently its very nice, i have had a different version which is banana and cocoa blended and frozen. its not very creamy but is very yummy. Guest guest Posted June 27, 2009 Report Share Posted June 27, 2009 I always make ice cream with coconut milk; I've done it for years, long before these new-fangled $6 pints of the stuff. I have a recipe for coconut ice cream here<http://wholefoodwholefamily.blogspot.com/2008/10/end-of-season-peach-cobble\ r-with.html>, but my master recipe is very easy. I use 1 can of coconut milk, which is about 1 1/2 cups. I combine that with about 1 c. of another milk - hempmilk, soymilk, whatever - sometimes I'll substitute vegan cream cheese or sour cream for a different flavor. I add 1/3-1/2 c. of maple syrup or agave nectar - to taste, depending on the recipe. And I add 2 t. of vanilla extract. Then I add additions as required - like peanut butter to the ice cream with a chocolate sauce swirl (stirred in after the ice cream is done), or fruit (mango is my favorite), or different extracts like almond with cherries, or peppermint with chocolate chips or swirls, or coconut with toasted coconut mixed in. Blueberries are very good with vegan sour cream and some lemon zest, and vegan cheesecake ice cream with a fruit swirl is also great. Granitas are delicious- and I'm sure if you google them or look on your favorite online recipe site, you'll find a ton of recipes. I, myself, don't use recipes- I go for whatever sounds good/we have on hand. The basic idea for a granita is a)put fruit (and even veggies!) in blender/food processor. Don't liquify, you want a mushy but smooth texture. Then, scoop it out into a big, shallow dish and freeze. Then you scrape it with a fork, spoon,whatever works best for you (I use a fork) and it's sort of a slushy thing. Delcious. Some of my favorites have been made with berries, fresh peaches, watermelon/lime. Basil makes a good addition, too. Guest guest Posted June 28, 2009 Report Share Posted June 28, 2009 We are vegan and my son has severe nut, dairy and certain legume allergies, so we’ve experimented with a lot of homemade ice cream alternatives, and the best we’ve created was using coconut milk. We just blend 1 can of regular coconut milk (not light), ½ cup of agave or maple syrup, 1 tbsp of vanilla flavor or powder and then dump in the ice cream maker. Easy! It’s a great base for a lot of different flavors… One of our favorites is adding a banana and 1 tsp ginger to the blender mix... We don’t make it too often… it’s TOO good! For some reason, it only works with a Champion brand. I guess the way this juicer is designed it adds a lot of air. We call them Banana Whips and they are amazing! Just frozen organic bananas right in the juicer. (use the full coverage blank, not the seive you use for juicing.) The whip comes out the end where the pulp would come out if you were juicing. We add fresh strawberries and chocolate syrup. My dad makes a wonderful icecream and it is very simple - soaked cashews, and maple syrup. He uses a blender and an ice cream maker. I know that he got an entire book just on making vegan ice cream. Guest guest Posted June 28, 2009 Report Share Posted June 28, 2009 I highly recommend the book Vice Cream: Gourmet Vegan Desserts by Jeff Rogers many of the recipes rely on cashews for their creaminess. I've made many of them for potlucks and parties and had people (veg and non veg) rave about them. one additional suggestion - instead of grinding up cashews per the recipe - buy unsalted, raw cashew butter instead and use a little less than the amount called for - saves time and is a lot smoother than you can probably achieve grinding your own. The Blendtec makes wonderful ice cream that is very creamy. We use frozen banana's with a variety of other frozen fruit. We do the same with our Champion juicer. The Champion is more clean up, but makes it a bit thicker as you do not need to add any soy milk. I usually use the Champion for larger crowds and as a treat for my kids. It still gets used at least once/month just for us. Then we put carob or chocolate chips on top, or sprinkles or Sundae toppings. Whatever you want. Lots of adults like it plain. I don't have an ice cream maker, so I stirred this 2-3 times an hour. I used chocolate chips (fair trade) instead of carob, and I used 1 Tbl of vanilla and 1 Tbl of dark rum. Blender Ice Cream: 1 cup of carob chips (I used 3/4 cup of Sunspire Unsweetened vegan carob chips) 3 cups unsweetened, plain soymilk (I used WestSoy) 1/2 cup pure maple syrup 1 cup cashew butter (I roasted cashews and used my Champion Juicer to make the cashew butter) 2 tbs. vanilla (I used only 1 tbs. of vanilla) 1/2 tsp. salt Blend all ingredients in a blender for 5 - 6 minutes. I'm also thinking about a juicer and was looking at the GreenStar, which supposedly also does the banana ice cream thing, but is more pricey.
