potluck brunch

We have been invited to a bring-your-own-baby potluck brunch this Sunday and I

would love some recipe suggestions for things to take. We never do anything

that involves cooking for a large/diverse group like this, so I will take all

the help I can get. I am a vegetarian and I eat dairy products but not eggs. I

would like suggestions for eggless vegetarian dishes that both vegetarians and

meat eaters will love.

Hi Shylah,

I found this wonderful French Toast Casserole recipe

l) last fall, and we've used it a million times since (makes a wonderful

holiday morning meal - just make ahead the night before and put in the

oven in the morning). You can easily replace the dairy stuff with vegan

stuff -- earth balance, soy or nut/seed milk, egg replacer. We've done

all kinds of variations, too - dried cranberries or apricots instead of

the raisins, many kinds of nuts or seeds in place of the almonds, other

extracts instead of vanilla, add nutmeg in addition to the cinnamon, and

I always use way more cinnamon. Oh, and we don't serve with maple syrup

as it's sweet enough for us - but we seldom use syrup on anything

anyway.

Overnight French Toast - From The Garden of Vegan

 

2 large apples - peeled, cored and sliced

3 Tbsp butter or margarine

2 tsp. cinnamon

1/4 cup dry sweetener of your choice

1/4 cup maple syrup

1 cup apple juice

1/2 cup non dairy milk (I use vanilla soy)

1/2 cup soy yogurt (I use vanilla soy)

1/2 tsp vanilla extract

4-6 thick slices of day old bread

 

In a saucepan, cook the apples in the margarine until they start to soften.  Add

the cinnamon, dry sweetener, syrup and cook until the apples are nice and soft. 

Pour into the bottom of an 8x8 baking pan.  In a large bowl, mix remaining

ingredients except bread.  Dip the bread into the milk/yogurt mix and layer on

top of the apple mix.  Pour the remaining milk mixture over the top.  Cover and

refrigerate.

 

In the morning, preheat the oven to 350 F.  uncover the baking dish and bake for

35-40 minutes

Just think of some main dishes that you serve at home and double the recipe -

chili, pasta salad, corn salad, etc. Tofu steaks (use whatever sauce you

prefer, such as a ginger or teriyaki) or portabello mushrooms. Vegetable

skewers are also well-received. If you are grilling along with others who

have/will be grilling meat, just wrap/cook yours in foil. It is also a great

time to provide samplings of hummus and similar spreads and dips.

 

For a brunch, finger or tea sandwiches, such as cucumber and hummus and sprouts

or avocado and vegetarian or vegan cheese and lettuce, fit well with the

occasion.

 

One thing I like to do in these situations, is to take a vegan baked good. Most

non-vegans can not believe chocolate chip cookies and iced cupcakes can be made

without animal products! I find people to be pleasantly surprised and it is a

great conversation starter about vegetarian/vegan options (if you wish to start

that conversation).

 

We like to take these opportunities to showcase some of our favorite foods.

Have you checked out vegan brunch by Isa Chandra Moskowitz?  Lots of great

recipes! One that I tried out on my meat eating sister and brother in law

was Tempeh Sausage Pastry Puffs--so simple and they loved it!  Even though my

brother in law thought it was a little spicy.  I served it with the navy

bean gravy.  I also made a coffe cake from there that was pretty good.  Not

sure how many you are cooking for.  But, I can send the recipes if you need. 

Let me know.  Also check out the Fat-free vegan site.  She has some really good

recipes.  I made some of her breakfast breads for VBS a couple of years back and

they still rave about them.
