Hi all!! I hope everyone is doing well. I have been uber busy lately and have

accumulated some questions for you all, so forgive me, because I am sending them

all together.

 

Q#1 I am going back to school in January and need some good websites to get

" green " school stuff at. I am looking for pencils, pens, paper all that jazz.

So please if you know of any good sites let me know.

 

Q#2 My BF really like fake meat and potatoes, I would like to get him to eat

less processed foods. Does anyone have fast, easy recipes that might help break

him of this habbit? If I could make them in bulk so they can be frozen and

reheated as a single serving that would be a big plus for me.

 

Q#3 A while back I asked about where people thought I should move that would be

more friendly towards my lifestyle. Someone suggested Ashville, NC. What time

of year would be best to visit? Do you know much about Penland? Are there

things I can Do with a baby while my BF is doing buisness? (We are thinking

about trying to visit in March or June.)

 

Q#4 Does anybody have good recipes that are easy to mass produce? My BF and I

are having a commitment cerimony in May and there are no vegetarian caterers

around here. I would really like to have recipes ready to see if any of the

companys could swing making them for us.

 

Q#5 Many of my more naturally minded friends wear woolens in winter. I was

wondering if there are any vegan alternatives to them. I am not vegan but would

really like to reduce the amount of animal products I still use.

 

Q#6 This is the last one I promise!! Does anybody know if you can have a

sensitivity to eggs without being out right allergic to them?

Hi Amity,

I have found puff pastry to be really awesome when it comes to junky food

that isnt too junky! You can stuff those babies with anything, like spinach

and not ricotta (I used tofutti cream cheese) or just left overs like dahl

or stews. Vege patties are pretty easy too and can be frozen in bulk. My

friend use to also do a great not fish with tofu. Its tofu marinated in soy

sauce and wrapped in seaweed and coated with a bit of besan flour and fried.

Really yummy and quick. Polenta is good too.

#4- mass produced meals... a themed lasagna is always delish (red sauce, white

sauce, regional veggies, etc...)

One of our favorite appetizers are mini Caprese skewers- on tooth picks thread a

grape tomato, a cube of mozzerella, and a basil leaf in between.  Balsamic glaze

drizzled on top or on the side for dipping. 

#6- yes, you can have a sensitivity and not an allergy.

For #2 look up Vegan Dad's blog (I think it's vegandad.blogspot.com -

search for seitan). He's got a ton of 'fakemeat' wheatmeat recipes.

I have a seitan recipe that I've experimented with and have altered so

much (and I don't write things down - so it's not something I could

easily translate into amounts but any of your basic seitan recipes

would work - I think vegandad also just put out fairly recently a

cookbook or an e-cookbook). The only version I ever had come out

properly was the vegan-food.org seitan recipe. I think it's the one

you bake rather than boil. And instead of boiling/baking, you can

always also steam it instead for uh, depending on if you do like a

'roast' size about an hour to an hour and a half. I wrap mine in foil

and I have a 'steam basket' for a grill that fits on a soup pot I

have, and I fill it up with water, put it on to boil while making the

seitan  and it's usually about ready when I'm done, or is shortly

after (For wrapping -  sometimes I will do cheesecloth then foil or

even just parchement paper and sometimes parchment and foil depending

on what I have around or just foil - they all work - cheesecloth adds

an outside texture, foil/parchment have a smooth exterior if that's

something you want to play with). I put the wrapped seitan in the

basket, cover with a towel and then put a pan that fits over that to

keep the steam inside. I'd guess a bamboo steamer or anything else you

could have over your pot, and not submerge the seitan in the water

would work, too - a collander maybe?) but the pot has to hold a lot of

water to boil for about an hour or so.

I altered the spices so they were more of the

sage/thyme/oregano/parsley/whatever else I felt like that would go

together, and the tomato paste and made it less pastrami-like the

second time I made it for a more versatile seitan roast.

I somehow found something about Kofu (which is what they call steamed

seitan) but it's really for about an hour or so till it's done. Not as

hard as it sounds.

 

fatfreevegan.com has an amazing bbq ribz recipe that's my 'go to' BBQ

ribz recipe (I do them in the oven, and they still come out perfectly

and leftovers are awesome).

 

All of the seitan I make is in bulk (like double or quadruple amts)

and I freeze them for later use in sandwiches, or whip up a gravy and

use them for dinner or whatever.

 

My husband bikes all winter and he's got a variety of fleece (which is

also what I have - but I do have some wool that a friend of mine gave

me, as she was de-stashing her yarn and I would have hated to see her

just dump it...makes me crazy and I'd rather use it, than have her

just pitch it...). I have found that bamboo is also really nice. It's

like cotton - keeps you warm in winter, cool in summer. I have socks

and a nightgown made from it - super soft, really strong and I just

love it. I think hemp is also good for winter items, too.

There is also a book called " No Sheep For You: Knit Happy with Cotton,

Silk, Linen, Hemp, Bamboo & Other Delights " by Amy R. Singer.

So you should be able to find alternatives in there (even if you don't

knit, maybe browse your bookstore with a pen/paper in hand as I think

they go into the qualities of them and how they hold up against the

wool conterparts - though I'm not sure why silk is in that list...but

maybe it's more from an allergy standpoint than a vegan one? At least

it's moving away from the 'everything warm is only made from wool' and

look for items made from those instead). Hope that helps anyway.

 

I don't know for sure about the egg sensitivity w/out the allergy to

them - but I've suspected my son has a sensitivity to them (or an

allergy that's exacerbated if he's had other things with it, but I

didn't follow through with a food journal, since I wasn't taking my

child who tested positive for a milk protein allergy and giving him an

OTC allergy medicine and then feeding him milk products to see if it

helped...when we'd said that we were totally fine in NOT having or

giving him milk at all - I just needed verification for school

paperwork that he had the allergy in the first place). He did not test

positive for eggs, as that was one they did test for, but he didn't

react to the skin test (and I wanted the blood test - it was just not

a pleasant visit in any way - and felt it was a waste of time and that

they didn't actually listen to me). But...just watching and knowing my

son, I still feel he has a sensitivity to eggs, and convinced my

spouse the same, after the last time they had eggs and we noticed some

overlapping with bowel issues and some severe mood changes after

having them (they had them maybe 2x a year if even that many times...)

but ever since then they've not had any at all. I think it's possible

based on my own experience with my son. I think they're gross, anyway,

so when I found out I didn't *need* them, I couldn't have been happier

LOL.

Have you tried making any fake meat?  Recipes can look daunting at first, but I

promise that after the first few batches, you can make it in your sleep.  Fake

meat freezes well and is a cost effective alternative to the store bought types.

of recipes...I probably spend way too much time looking at recipes, but I have

found some really great ones that I use all the time.  There are a lot of online

recipes for fake bacon, fake sausage, fake burgers...you get the picture.
