Not sure how to do it, but I'd try something along those lines. Or like this: It's a mango buttercream frosting - just sub. vegan ingredients - might be a light/pale orange. It just replaced a bit of the rice milk we used to make the frosting. It turned a medium orange color and didn't add any funky tastes. We are ovo-veg, but when it comes to icing, I LOVE buttercream and allow myself this indulgence . But, one of the mom's requested vegan for her child and I tried to get her to do it with no avail. I have found them at My Organic Market and Whole Foods stores, as well as online at ChefTools.com. Try www.indiatree.com. Here are the contents: Blue: deionized water, glycerin, red cabbage; Red: beet juice, citric acid; Yellow: deionized water, glycerin, curcumin. The company also makes plant dyed decorative sugars. I have found that the colorants do add some *taste* to my recipe, especially the yellow color, but icing is still icing . The cupcakes are amazing, but I admit I am not much of a baker, even though I wish I was. I have some Carrot Puree in the freezer, so I may just add the confectioner's sugar to a little bit slowly and see if it gets to the consistency I want. You may check it out. It is gluten free vegan baking (I was looking at it for a friend who isn't vegan, but her children have allergies and one has celiacs) and I know they had pictures of beautifully iced cupcakes.
