The only things I can think of would also add their flavor to it...

Like a mango puree with maybe a few drops of beet juice? Not sure how to do

it, but I'd try something along those lines. Or like this: It's a mango

buttercream frosting - just sub. vegan ingredients - might be a light/pale

orange. Could be delicious!

Pumpkin purée may work well. I will try it and use confectioners sugar to

sweeten it into an icing consistency.

When I worked at my local coop we used carrot juice to color the frosting for

our vegan orange cupcakes. It just replaced a bit of the rice milk we used to

make the frosting. It turned a medium orange color and didn't add any funky

tastes.

there are several all natural food colorings on the market that use either

carotenoids (from carrots and other orange veggies) or crushed annatto seeds.

I have awful luck making vegan icing and this will be for my

daughter's Montessori school Fall Celebration. We are ovo-veg, but

when it comes to icing, I LOVE buttercream and allow myself this

indulgence ;). But, one of the mom's requested vegan for her child and

I tried to get her to do it with no avail. Which is fine, as I need

to sharpen my skills in this area. I have good feelings about the

pumpkin purée, as it will be topping pumpkin-shaped vegan cookies.

ever....even buttercream that fools die hards.

I second that!! I have to make a double batch every time I make it. My

boyfriend always steals some for his favorite junky treat, graham crackers and

frosting.

Cassie,

Try India Tree Natural Decorating Colors, which are created with vegetable

colorants. I have found them at My Organic Market and Whole Foods stores, as

well as online at ChefTools.com. Try www.indiatree.com.

 

Here are the contents:

Blue: deionized water, glycerin, red cabbage; Red: beet juice, citric acid;

Yellow: deionized water, glycerin, curcumin.

 

The company also makes plant dyed decorative sugars.

 

I have found that the colorants do add some *taste* to my recipe, especially the

yellow color, but icing is still icing :).

Something always makes the icing from this book melt.  The cupcakes are amazing,

but I admit I am not much of a baker, even though I wish I was. I have some

Carrot Puree in the freezer, so I may just add the confectioner's sugar to a

little bit slowly and see if it gets to the consistency I want.  Thicker is

going to be better when dealing with 3-6 year old.

I checked out the cookbook Babycakes from my local library and I think they had

natural food colorings/recipes, but I've returned the book. You may check it

out. It is gluten free vegan baking (I was looking at it for a friend who isn't

vegan, but her children have allergies and one has celiacs) and I know they had

pictures of beautifully iced cupcakes.
