I highly recommend The Joy of Vegan Baking -- it has a lot more than baked goods. You can probably find a selection at any good-sized library to look through and try out before purchasing. Basically a snowman made out of two paper plates- one for head, one for body. Glue together, do eyes, nose, arms, scarf, etc. If you think you can find them, the kids might be able to do the eyes, arms etc. with stuff found at the park.
