I'm looking for something easy, hearty, and tasty. By easy I mean quick and with few ingredients. Even something I could do most of the prep work the night before would work. Thanks guys!! This is what they usually have choices of: always fresh fruit with anything they pick whole wheat spiced banana pancakes (I make a big batch and freeze them, then just pull out and heat up as needed) whole wheat English muffins with peanut butter tofu scramble whole grain cereals (they eat the same healthy cereals I do) whole grain muffins (I make a big batch and keep them in the freezer, just pull them out and defrost in the microwave as needed) whole wheat toast with soy yogurt and fruit Jacqueline www.vegblogger.com Quote Link to comment Share on other sites More sharing options...
Guest guest Posted December 23, 2009 Report Share Posted December 23, 2009 My kids are 2 and 3.5 and they want only the same few things every morning for breakfast. They ALWAYS eat a banana and drink a cup of OJ. Then they usually choose to eat yogurt (we do dairy yogurt but you could choose soy yogurt) and I mix ground flax seeds in it.  And some days they will want whole wheat pancakes, whole wheat toast with peanut butter or Earth's Best Cereal Bars. Every once in a while they will eat oatmeal with cinnamon and raisins. Guest guest Posted December 23, 2009 Report Share Posted December 23, 2009 My son loves oatmeal (we do it a few different ways - cinnamon with raisins, or sometimes I add mushed up garbanzos -it adds a nutty taste and extra nutrition, brown sugar/cinnamon sometimes, apples, or bananas) Whole grain cereal with soymilk/rice milk English muffins or toast (or just plain whole grain bread not toasted), with soynut butter, or almond butter or peanutbutter and some kind of jam, OJ or rice/soymilk. Tofu scramble (I make mine with potatoes, onions, peppers or spinach/greens - but he usually just eats the tofu and potatoes) I make different 'breakfast' muffins - apple, jam filled, banana muffins or pumpkin muffins - you get the idea, something not too sweet or something I can adjust the sweetner by adding fresh fruit or apple sauce or good Jam/jelly (I add different things to them ground pepitos, flax seeds or sunflower seeds, a handful of chocolate chips sometimes, or dried cranberries - sometimes all of them if I feel like it...depends on what we have on hand when I do it). I make them in double batches, and freeze them to take out to alternate with the above. Sometimes I make pan seared tofu (like scramble, only I do it in triangles or rectangles, savory spiced) with toast, or we make McGuffins (what we call them - english muffins, pan sered tofu, sometimes we have vegan cheese on them, or not and/or sometimes we have vegan sausage or some kind of fakey-bacon that I've made with tofu or seitan). Cold vegan pizza (yes, my family is weird LOL) I've tried to get him to eat grits, but he just doesn't like them. I love them, and will have my pan seared tofu with it, or do them plain, or add vegan cheese to them depending on what I have, or what i'm in the mood for). I'd think if they're little still, they might go for grits, or cream of wheat or cocoa wheats (yep, it's vegan, at least last time I had them it was, but my son decided he didn't like them anymore a while ago - so I stopped getting them, though I like them sometimes). Guest guest Posted December 23, 2009 Report Share Posted December 23, 2009 Oatmeal cooked with apple cider Pancakes are great to keep in the freezer; reheat in the toaster oven and make peanut butter and banana sandwiches. Here is our current favorite: OATMEAL BLUEBERRY PANCAKES    1/2 cup whole wheat flour (i use whole wheat pastry flour) 1/2 cup all-purpose flour (i use whole wheat pastry flour) 2 tablespoons brown sugar 2 tablespoons baking powder 3/4 teaspoon salt 1 1/2 cups quick cooking oats 2 cups milk (plant or animal) 3 eggs, beaten (or egg substitute) 1/4 cup olive oil (I think that olive oil is too heavy; I use softened butter or canned pumpkin) 1/2 cup frozen blueberries Preheat a lightly oiled griddle over medium heat. In a large bowl, mix whole wheat flour, all-purpose flour, brown sugar, baking powder, and salt. In a small bowl, mix oats and milk. Whisk in eggs and olive oil. Pour into the flour mixture all at once. Continue mixing until smooth. Gently fold in blueberries. Pour batter about 1/4 cup at a time onto the prepared griddle. Cook 1 to 2 minutes, until bubbly. Flip, and continue cooking until lightly browned.  Leftovers freeze well: Overnight French Toast 2 large apples - peeled, cored and sliced 3 Tbsp butter or margarine 2 tsp. cinnamon 1/4 cup dry sweetener of your choice 1/4 cup maple syrup 1 cup apple juice 1/2 cup plant or animalmilk (I use vanilla soy) 1/2 cup yogurt (I use vanilla) 1 tsp vanilla extract 4-6 thick slices of day old bread In a saucepan, cook the apples in the butter/margarine until they start to soften. Add the cinnamon, dry sweetener, syrup and cook until the apples are nice and soft. Pour into the bottom of an 8x8 baking pan. In a large bowl, mix remaining ingredients except bread. Dip the bread into the milk/yogurt mix and layer on top of the apple mix. Pour the remaining milk mixture over the top. Cover and refrigerate. We started with baby oatmeal when she was little, the boxed kind with iron, and gradually added regular oatmeal. I cook her a new pot about every other day. It is just milk of your choice (we use soy or almond) plus water, and then the oats. I stir in some applesauce to sweeten. My oldest generally prefers cereal on weekdays, and we do pancakes once a week, with whole wheat pastry flour. My middle kid just eats bagels most mornings except for pancake mornings, but we're lucky to get him to eat anything at all, so we'll take what we can get with him. With him I focus more on lunch and dinner when there's more time to coax him. Most of which we also do (scrambled tofu, batches of muffins waffles pancakes etc to reheat, cereal, yogurt, smoothies(a huge hit with my 3yo), pb on ww toast. One thing we also love is tofu mcmuffins- a pound of tofu sliced, mix 1/4 cup olive oil 1/4 cup apple cider vinegar and 1/2 tsp salt and pour over top of tofu in a oven safe dish. Bake at 450 for 10 min, flip and bake 10 mote mins. It usually takes longer for the oven to heat than to prep this one. Guest guest Posted December 24, 2009 Report Share Posted December 24, 2009 I like the Irish or Scottish Oatmeal which I set up in a small 1-1/2 quart crockpot the night before, plug it in and in the morning it's ready to eat. I add a little maple syrup for sweetness, and either fresh or dried fruit, chopped nuts, or a little peanut butter. Other whole grain (not instant) cereals can be done overnight in the crockpot too. Muffins are also good and can be done the night before, either prepared the night before or you can mix the dry ingredients in one container, the wet in another, set up the muffin tin, and in the morning mix and bake while you take a shower (or whatever). Isa Moskowitz, who wrote Vegan with a Vengeance and Veganomicon, has a new book called Vegan Brunch with easy recipes for muffins and scones as well as recipes for pancakes, waffles and french toast, scrambled tofu, and other interesting stuff. I love the muffin recipes in the other two books too (my favorites are the banana wheat germ muffins, blueberry corn muffins and almond quinoa muffins) and once you do it a few times it goes really fast.
