Guest guest Posted December 28, 2009 Report Share Posted December 28, 2009 Ann, My official " birthday cake " recipe is from The Jewish Vegetarian Cookbook by Roberta Kalechofsky and Rosa Rasiel. It's chocolate cake with chocolate " buttercream " frosting and it is entirely vegan. I have been making it every year for the last 10 years (at least) and NO ONE will know it's vegan unless you tell them. I have even brought this cake to other children's birthday parties and everyone liked it better than the store bought (non-vegan) cake. The recipe is as follows: 1 c sugar 1-1/2 cups flour 1/2 t salt 1/4 cup unsweetened cocoa 1 t baking soda 1 T vinegar 1/2 c vegetable oil 1t vanilla 1 c cold water Mix together the dry ingredients. Mix together the wet ingredients. Combine wet into dry and mix to combine. Pour into 8 x 8 pan and bake at 350 degrees for 35 minutes. You can double the recipe for a layer cake or for a 9 x 13 pan. For the frosting: 1 lb. box confectioner's sugar 1/2 c margarine, softened 1t vanilla extract 3T soy milk or water 3-1/2 T unsweetened cocoa Mix together cocoa with water/milk. Beat together margarine, vanilla and cocoa mixture until smooth. Gradually add frosting until smooth and spreadable. I have 2 questions for you! 1) There are so many vegan cake recipes out there; what is your FAVORITE cake or favorite, no-fail website? I need a chocolate cake and white or chocolate icing that doesn't scream " vegan " ! 2) I would like, if possible, to have an activity of making snowmen from soap. Some of you older moms may remember, as I do, making soap balls as a kid from Ivory Snow soap flakes... All vegan soaps I've seen are pricey, and there's no way I can justify supplying 10+ kids with $10 each in soap to make soap snowmen! Does anyone know of an INEXPENSIVE vegan soap that I can grate into flakes, or any other suggestion? I know this may not happen, but I figured it was worth running it by you! THANK YOU! Read the ingredients list... hydrogenated this and that, artificial colorings, etc....stuff that people shouldn't be eating. I make vegan cakes from scratch at home. Lately I've been using the recipe in The Joy of Vegan Baking. That's for a chocolate one.... We used it for my daughter's last party for cupcakes & everyone could not stop raving about them (and no one at the party was vegan or even vegetarian for that matter aside from me, my daughter & my husband). We used Isa's buttercream frosting recipe too. We always have lots of kids and adults ask for the recipe. Someone mentioned box mixes. A friend with allergies uses them, but replaces the egg and oil with pureed pumpkin. We aren't into box mixes, but I know people rave about her cakes. Guest guest Posted December 30, 2009 Report Share Posted December 30, 2009 Hi, i use a cake from Vegan with a vengence, its amazing, but alternatively i can change just about any cake receipe by replacing eggs with oil (1 tablespoon per egg) and butter with nuttelex or veg oil margarine, cow milk with soy, choc is dark choc. Bananas are good egg replacers too. But the best reciepe ever is: Chip muffins (i just make a cake instead!) 1.5 cups all purpose flour 3/4 cup sugar 2.5 teaspoons of baking powder 1/2 cup cocoa powder 1/2 teaspoon of salt 1 cup soy milk 1/2 cup of oil (it says canola but i don't trust the stuff so i use olive or sunflower) 3 tablespoons of soy yogurt ( Ive accidently used blueberry flavored yogurt and it was great!) 1 teaspoon of vanilla extract 1/2 cup of chocolate chips. cook on 375 degrees F. (im in aust so i do it on 180 degrees C) for 18-20 mins. Good luck with the party. I don't think that they are very pricy, and they might work for you snow man craft, or you can just make regular melt and pour soaps with the kids. Most soap bases should be vegan. Happy celebration! I can buy it at our local grocery (hannafords) for a little over a dollar and it makes about 4 cups of soap flakes (I use it for laundry detergent).
