The proportions are: 1-1/2 cu pitted dates, 1/3 cu unsweetened cocoa powder, 1/3 cu chia seeds, 1/2 tsp vanilla extract, 1/4 tsp almond extract (I subbed more vanilla), and 1 cu raw almonds. Pulse all in food processor and press into a wax-paper lined pan. Cover and chill overnight, then cut into bars. The chia seeds added to the texture and the nutritional value. I imagine you could sub other small seeds for a similar effect. Sesame seeds might be tasty - maybe flax would work.
